The best cookies, in my opinion, are soft cookies. Everyone who loves soft cookies often ask how to make soft cookies. There are a few secrets that will help you make these perfectly soft cookies every time.
Melted Butter
Melted butter makes the cookies stay soft. I know it seems like it shouldn’t make a difference but it really does. You want to make sure you are using melted butter to keep these cookies super soft.
Brown Sugar
Brown sugar holds moisture more than regular sugar. Think about the times you have gone to get the brown sugar and it is hard. Then when you add bread or something else that absorbs moisture and then the brown sugar gets soft again. While uncooked brown sugar will get hard, in a cookie, it will suck up the moisture and make the cookie soft. Brown sugar will even help the cookies stay soft longer.
Don’t over bake
The other secret, and maybe the best secret on how to make soft cookies is to not over bake them. When you are taking the cookies from the oven, it should still seem soft. Like if you touched it, it would sink it, but not so undercooked it still feels like uncooked cookie dough. When you over bake cookies, they will be hard no matter if you do the other tricks.
Other options that are not used in this recipe
There are two other tricks that people use to make soft cookies. Add cornstarch to the recipe because of its ability to hold moisture and adding cream cheese. Cream cheese makes the cookies richer and more decadent, but also makes them softer without making them cake-like because of the fat content in the cream cheese.
How Long does this Pumpkin Chocolate Chip Recipe Last
When you store these cookies at room temperature, the cookies will last for 2 to 3 days. Homemade soft cookies have a shorter shelf life than the harder cookies that are homemade. Hard cookies will stay fresh for up to 2 weeks. And any homemade cookies will spoil faster than store-bought cookies because it does not have preservatives. If your cookies last longer than 2 to 3 days, they will start to feel hard. You can make them soft again by reheating them for a few seconds in the microwave with a damp paper towel. You can freeze these cookies for up to 5 months. Be sure to store the cookies in an airtight container or a freezer bag whether they are stored on the counter or in the freezer.

There are 2 ways that you can freeze cookies.
Freezing Baked Cookies
If you have the cookies already made and you want to keep them fresh so you have pumpkin cookies on hand that just need to be thawed, you can freeze the cookies in a freezer bag.
Freezing Cookie Dough
If you have the dough, and you have not baked the soft pumpkin cookies yet, you can freeze the dough. There are two ways to freeze the cookie dough. You can freeze the entire batch of cookie dough, just as is. You can also get the cookies ready, by placing them dough balls on the cookie sheet or plates, or other freezer safe surface. Place it in the freezer and let the balls freeze through. Once they are frozen, you can take the frozen cookie dough balls and place them in freezer bags. Using one of these two methods is like buying ready to use cookie dough. One in the tub and the other in the ready to bake cookie trays. Never buy prepackaged cookie dough again.

- sweet cream butter
- pumpkin puree
- sugar
- brown sugar
- Molasses
- pure vanilla extract
- flour
- pumpkin pie spice
- baking soda
- kosher salt
- semi sweet chocolate chips
How to Make Pumpkin Chocolate Chip Cookies Recipe
Line two cookie sheet’s with parchment paper and set aside
Using a medium microwave safe bowl, melt the butter
Mix in the pumpkin puree, both sugars, molasses and vanilla extract into the melted butter until combined
In another bowl, whisk together the flour, pumpkin pie spice, baking soda, and salt
Gradually mix in your dry ingredients into the wet until combined
Mix in the chocolate chips
Using a medium cookie scoop, scoop some dough onto your hands and roll into a ball
Place onto the cookie sheet and lightly press down with your fingers until a thick disk forms
Repeat steps with remaining dough until all is gone
Place both cookie sheets into the fridge for 3 hours
Once the 3 hours are up, preheat your oven to 350 degrees
Once oven is preheated bake the cookies for 12-13 minutes
Allow cookies to cool completely before enjoying!
