Blueberry Waffles

I love breakfast food! Just ask my husband, there is no holding back. I love french toast, pancakes, waffles-basically if you can put syrup on it I am going to love it. 🙂 So this weekend I was having a craving for some waffles and I still have a giant container of blueberries in my refrigerator so of course blueberry waffles sounded magnificent. This recipe cooks up a fluffy waffle bursting with plump and juicy blueberries. Top with a bit of butter and some syrup and you will have yourself one perfect weekend breakfast (or any other time of the week!)

Blueberry Waffles
Ingredients
- 2 eggs
- 2 cups all-purpose flour
- 1 3/4 cups milk
- 1/2 cup vegetable oil
- 2 tablespoon white sugar
- 4 teaspoons baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1 cup blueberries

Instructions
- Preheat waffle iron. Beat eggs in large bowl with hand beater until fluffy. Mix in flour, milk, vegetable oil, sugar, baking powder, salt, vanilla, and cinnamon just until smooth. Let sit 10 minutes then fold in blueberries.
- Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown.
