The best thing about a quiche, any quiche, is that it is great for using leftovers. Because of that and the fact that it is cheap to buy the ingredients, quiche is a perfect budget meal. It is easy to make, especially without the crust, and it takes very little time. Throw everything together and it is ready for the oven.

Because this is a crustless quiche, as long as you do not add anything else to this quiche that has gluten in it, All of the ingredients that I have listed in the ingredients list is gluten free. That makes this a great tasting gluten free meal.

Can I Make a Crustless Mini Quiche Instead?

Of course. It is simple to turn this into several crustless mini quiches. Once you have made the quiche filling you can add it to small ramekins or other single serving size, oven safe dishes. You might have to change the cooking times on the quiches, however, the cooking time will change depending on the size of the dishes you are using.

Breakfast for the week

I like to make this recipe ahead and have it for breakfast for the week as well. I will make it for dinner one night and then the next few mornings I can have it for breakfast or lunch. Although I have been known to eat it for dinner again the next night. Make it ahead for dinner and then make it easier to have breakfast each morning.

How Long Does it Last?

When you make this quiche you will want to make sure to store it in the refrigerator. Once it has cooled, make sure that it is covered well with plastic or that it is an airtight container. The quiche will last about three days if it is stored properly. If you do not think it will be finished in time, it is important to move it to the freezer to keep it for a later time.

How to Store Crustless Quiche Recipe

If you have leftovers of this recipe that you will not be able to finish before it spoils, you can cut the quiche into single serve pieces and then wrap it well with plastic wrap. After wrapping it, add each piece into a freezer. I like to keep all of the pieces together in one freezer bag with the name and the date on the bag. This helps me keep the pieces together in one place and I know what it is and when it was made. It also helps to keep pieces of quiche from getting lost in the freezer.

  • Heavy whipping cream
  • ham

  • Scallion

  • Salt and pepper
  • Mozzarella cheese
  • Cheddar cheese

How to make crustless ham and cheese quiche

Preheat the oven to 350 degrees.

Heat an oven safe skillet over medium heat on the stove.

Add in the cubed ham and cook for 2-3 minutes.

Mix in the garlic and scallions, and cook for 30 seconds more before removing the skillet from the heat.

In a bowl, whisk together the eggs and heavy whipping cream.

Pour the egg mixture over the meat in the skillet.

Top with salt and pepper to taste.

Sprinkle on the mozzarella and cheddar cheeses.

Place the skillet into the oven, and bake for 35-40 minutes until the eggs are cooked through, and the top has begun to brown. Let sit for several minutes, and then serve.

  • 5 oz Cubed ham
  • ½ c Diced onion
  • 1 Scallion chopped
  • 2 Cloves minced garlic
  • Salt and pepper to taste
  • ½ c Mozzarella cheese shredded
  • 1 c Cheddar cheese shredded
