Wow! That is all I could say when this recipe was shared with me! I was in heaven! I had been complaining about this low-carb diet I was following and how there is so little flavor to many of the items.

I am betting I just miss my bread. So, this recipe was given to me so I could try it and stop complaining. This pizza casserole is absolutely amazing! I guarantee you’ll hardly realize you’re on a low-carb diet with this easy low carb pizza casserole for beginners. Best of all, you don’t need to be a professional home cook for the spectacular flavors this quick low carb pizza casserole recipe provides.

There is a bottom crust-type portion of the casserole that is not a crust. It is made with eggs, cheese, and cream cheese. I was blown away! From that point on, you top the pizza as you would any other pizza. This makes for the best low carb pizza casserole recipe I’ve yet to try. Hands down it’s unbeatable. Ingredient Notes & Substitutions

Shredded mozzarella: The cheese can be switched to other blends or types of cheese. However, mozzarella is a classic cheese used in traditional pizza-making recipes!

Cream cheese: I recommend using full-fat cream cheese if you’re on a low-carb, or keto diet. However, you can swap the full-fat cream cheese with reduced-fat cream cheese to reduce your fat intake.

Minced garlic: Minced garlic is optional, but perfect for those who love garlic. You can always swap minced garlic with either a tiny bit of garlic paste or garlic powder. Garlic powder is ideal if you’re not a fan of freshly minced garlic on your pizza.

Heavy whipping cream: Heavy whipping cream is ideal but can be swapped for whole milk. You can also try swapping it for half-and-half if you do not have any heavy whipping cream in your refrigerator.

Toppings: You can use the toppings you want, such as veggies, pepperoni, bacon, ham, or sausage.

How to Make It

Step 1. Preheat the oven to 350 degrees. Prepare the remaining ingredients while you’re waiting for your oven to heat up.

Step 2. In a mixing bowl, combine 4 ounces of cream cheese and 4 eggs. Beat until completely smooth and creamy.

Step 3. Add in the grated Parmesan cheese, heavy whipping cream, oregano, and minced garlic. Stir until combined well.

Step 4. In the bottom of a well-greased 9×13 baking dish, spread out 1 cup of shredded Parmesan and 1 cup of the shredded Mozzarella cheese.

Step 5. Pour the egg mixture over top of the cheese.

Then, smooth it out!

Step 6. Place the baking dish into the oven, and bake for 30 minutes.

Step 7. Remove the baking dish from the oven, and layer ½ cup of low-carb pizza sauce over the top.

Step 8. Place any toppings that you would like in your pizza casserole on top of the sauce.

Step 9. Layer another cup of mozzarella cheese on top of the casserole.

Step 10. Top with additional toppings if desired.

Step 11. Place the casserole under the broiler in the oven until the top is browned and bubbly. This will likely take between 2 and 3 minutes. Keep an eye on your oven to prevent burning!

  • c. Heavy whipping cream
  • ½ tsp. Oregano
  • ½ tsp. Minced garlic
