Low Carb Pizza Casserole

Wow! That is all I could say when this recipe was shared with me! I was in heaven! I had been complaining about this low-carb diet I was following and how there is so little flavor to many of the items.

I am betting I just miss my bread. So this recipe was given to me so I could try it and stop complaining. This Pizza Casserole is absolutely Amazing!!

There is a bottom crust-type portion to the casserole that is not a crust, it is made with eggs, cheese, and cream cheese. I was blown away! From that point on you top the pizza as you would any other pizza.

All the toppings you want or leave what you don’t want off.

What makes this a recipe to keep?

For those of us that have carb restrictions, you understand the importance of wanting foods that taste like what we are used to. This Low Carb Pizza is the one that you need to try! It is easy to make and gives you options for toppings, such as any toppings!

Variations

The cheese can be switched to other blends or types of cheese. You can use the toppings you want, such as veggies, pepperoni, or sausage.

Ingredients:

  • Eggs
  • Cream cheese
  • Grated Parmesan cheese
  • Heavy whipping cream
  • Oregano
  • Minced garlic
  • Shredded mozzarella cheese
  • Parmesan cheese shredded
  • Low-carb pizza sauce
  • Toppings of your choosing

How to make Pizza Casserole:

Step 1. Preheat the oven to 350 degrees.

Step 2. In a mixing bowl, combine 4 oz of cream cheese and 4 eggs. Beat until completely smooth and creamy.

Step 3. Add in the grated Parmesan cheese, heavy whipping cream, oregano, and minced garlic. Stir until combined well.

Step 4. In the bottom of a greased 9×13 baking dish, spread out 1 cup of shredded Parmesan and 1 cup of the shredded Mozzarella cheese evenly.

Step 5. Pour the egg mixture over top of the cheese.

Then smooth it out.

Step 6. Place the baking dish into the oven, and bake for 30 minutes.

Step 7. Remove the baking dish from the oven, and layer ½ cup of low-carb pizza sauce over the top.

Step 8. Place any toppings that you would like in your pizza casserole on top of the sauce.

Step 9. Layer another cup of mozzarella cheese on top of the casserole.

Step 10. Top with additional toppings if desired.

Step 11. Place the casserole under the broiler in the oven until the top is browned and bubbly.
