Mashed Sweet Potatoes lightly sweetened with maple syrup and brown sugar. Sweet potatoes are not just for holidays anymore! My husband and I enjoy sweet potatoes all year round. I swear, as much as we eat them you would think we were from the South! 😉 It is one of my favorite side dishes and desserts (sweet potato pie) to make. Last Sunday I served this side dish along with caramel apple pork chops and corn bread. Next time you are wanting to make a fast and delicious side dish, remember this light and fluffy substitute for regular mashed potatoes.
