Sweet potatoes are healthier than regular potatoes in so many ways. They have more fiber, minerals, and vitamins. And the kids gobble them up just as they do cake. What a victory!

If you’re struggling with time, these fritters are your saviors. They come to life in only a few minutes. And you only need your pantry staples.

How to Serve Sweet Potato Fritters?

The recipe is so versatile you’ll be amazed. It goes with your favorite dip sauce. You can have them on the side with your pulled pork sandwiches. Or you can serve them with a salad and call it a meal. I also always top them with some parsley for more zing. And it looks pretty, so why not.

Tips for Some Fritter Success

  • Easy Shredding: Sweet potatoes are tough guys. But you can reduce the time it takes to grate them using your food processor. Use the grating plate and thank me later.
  • Choose the Right Oil: You need oil with a high smoke point. If your oil heats too fast, you’ll have raw and burnt fritters. My go-to options are avocado and peanut oil. You can also use standard corn oil.
  • Sprinkle Salt Soon After Frying: Make it a rule! When you add salt right after frying (at turbo speed), it melts into the fritter. Yum!

  • 2 medium sweet potatoes
  • Cornmeal
  • Panko bread crumbs
  • 1 egg
  • Garlic powder
  • Onion powder
  • Salt
  • Pepper
  • Oil, for frying

Fritter Variations

My favorite time in the kitchen is when I can make the recipe mine. So, I’ve tried a few variations over the years, and here’s what I have to say to you:

  • Add some baking powder for fluffier fritters
  • Spice it up with red chili flakes or a dash of chipotle peppers
  • You can add some kind of meat, too (bacon, prosciutto, or even chorizo)
  • Top with feta cheese, diced onions, and parsley
  • You can try different dips like garlic aioli, tzatziki, or even the classic ketchup

Can I Bake the Fritters in the Oven?

Definitely, you can. If you want to eat healthy, air frying or baking is always an option.

Why Are My Fritters Soggy?

The most common enemy of crunchy fritters is moisture. If you have too much in the mix, your fritters won’t get crunchy. That’s why you have to make sure you squeeze out all the liquid from the potatoes. Use a cheesecloth or a sieve to do that.

Can I Make Them in Advance?

You can! I love this the most about fritters. Fry and cool them. And then place them on a baking sheet. Now freeze them for four hours. When they’re solid, put them in a freezer-safe bag and freeze them for up to 6 months. When you’re ready to serve, bake them at 400 degrees for 10 minutes, and done!

How to Store Leftovers?

You can easily store your leftovers in the fridge for a few days. Use an airtight box. When you reheat them, do it in the oven as instructed above. I tried using my microwave oven once, and they turned out so mushy. Total fail. So, don’t go that route.
