Does This Cake Need Refrigerated
No, this banana cake with marshmallow frosting doesn’t have to be refrigerated if you don’t want it to be. I love the texture of the cold cake, but you can easily leave it at room temperature if you want to. It will last 3-4 days, whether it’s chilled or at room temp. Try it both ways to see what you like the best.
How Long Will This Cake Last
This incredible banana cake will last for 3-4 days, either in the fridge or on the counter. It just needs to be adequately covered and kept away from any heat sources like sunlight or steam.
Can You Freeze
Yes, you can freeze this banana cake if you want. Allow it time to cool all the way, then cover with foil or plastic wrap. Place it inside of a freezer-safe bag or container. The cake will last 2 – 3 months in the freezer—Thaw in the fridge or on the counter before eating.

- Yellow cake mix; I used Betty Crocker
- Baking soda
- Cinnamon
- Nutmeg
- Pinch of cloves
- Water, oil and eggs; that are listed on the box
- Large over-ripe bananas mashed; about 1 1/2 cups
Marshmallow Frosting:
- Egg whites, large
- Cream of tartar
- Pinch of salt
- Granulated sugar, divided
- Vanilla extract
- Water
- Caramel sauce; for drizzle
How To Make Banana Cake
Step 1. Warm the oven to 350 degrees. Then grease the sides and bottom of a 9 x 13 pan.
Step 2. Mix up the box cake mix, baking soda, cinnamon, nutmeg, and cloves. Combine them in the mix.
Step 3. Then pour in the water, oil, and eggs as directed on the back of your box cake mix.
Step 4. Mix the cake mix until almost completely mixed. Then mix in the mashed bananas.
Step 5. Bake the cake for 30-40 minutes or until your banana cake is done. Allow the cake to cool on a cooling rack.
Step 6. Once the banana cake is cooled you can begin to work on the marshmallow frosting.
Step 7. Pour the egg whites, cream of tartar, and salt into a mixing bowl and whip on medium speed until foamy.
Step 8. While you are still whipping slowly add 1 cup of the sugar; about 1 teaspoon at a time.
Step 9. Once all of the of sugar (one cup) has been added, continue to whip until the meringue can hold stiff peaks.
Step 10. Mix in the vanilla extract, and continue to stir the meringue at low speed while you prepare the hot sugar syrup.
Step 11. Place the additional 1 cup of sugar in a small pot, along with the water.
Step 12. Heat the pot using medium heat and cook until the syrup boils and reaches 235 degrees F.
Step 13. In a very slow and steady stream, pour in the hot sugar syrup to the meringue, while continuing to whip on low speed.
Step 13. When all the syrup has been added, turn it to high speed and continue to whip until very stiff and glossy. This will take just a bit of time to do.
Step 14. Spread the frosting on the cake evenly, and then use a kitchen torch to over the top to help give it a browned marshmallow look.
Step 15. Then drizzle caramel sauce on top.
Step 16. After the cake is frosted and ready you can slice and serve your banana cake with marshmallow frosting.

- 1/4 TSP nutmeg
- Pinch of cloves

- 2/3 C water
- Caramel sauce; for drizzle

- In a very slow and steady stream, add the hot sugar syrup to the meringue, while continuing to whip on low speed.
- When all the syrup has been added, turn the mixer up to high speed and whip until very stiff and glossy. This will take just a bit of time to do.
- Spread the frosting on the cake, and then use a kitchen torch to help give it a browned marshmallow look.
- Then drizzle your choice of caramel sauce on top.
- Once your cake is frosted and ready you can slice and serve your banana cake with marshmallow frosting.
