This creates the perfect boat to fill the peppers. Cutting the peppers in half, across the middle will not give you the right size for stuffing the peppers.
Once you have cut the peppers you will want to pull out the ribs of the pepper and the seeds.

Tips for Freezer Stuffed Peppers
When I am freezing my stuffed peppers I like to freeze them after the cooking process is done. This makes it easier once they are thawed to simply reheat and eat. When you are preparing your peppers for freezing, you want to use a freezer and oven safe pan. Most casserole dishes will work. If you do not have extra casserole pans available, you can purchase disposable pans.
Put the stuffed peppers into the casserole dish and wrap it well with plastic. Make sure the peppers are covered well so they do not get freezer burn. Another option is to wrap each pepper individually. This is great for when you want to be able to make one pepper at a time. If you choose to freeze the peppers one at a time, another option is to freeze the peppers first and then put them in a freezer bag. Freezing them first keeps them from losing the filling while in the freezer bag.
When you are ready to thaw the peppers, thaw them in the refrigerator before heating. If you used a freezer bag, remove the peppers from the bag before thawing.
How to Reheat Chicken Stuffed Bell Peppers
When you are ready to reheat these peppers, you will want to reheat in the oven. While you can reheat the peppers in the microwave, it is hard to heat them thoroughly. Some spots are too hot and others will remain cold. That is why the oven is the best. If you do decide to heat these in the microwave, simply cut the peppers up first. This lets them reheat more evenly.

- Shredded mozzarella cheese
- Marinara sauce
- Fresh or frozen breaded chicken
- Parmesan cheese
- Salt and pepper
- red pepper flakes
- parsley
- garlic
How to Make Parmesan Chicken Stuffed Peppers Recipe
Preheat the oven to 400 degrees.
Slice 4 bell peppers in half, and remove all seeds and the insides of the peppers. Layer them in a single layer in the bottom of a greased baking dish.
Dice the cooked chicken.
In a large mixing bowl, combine 2 cups of the mozzarella cheese, the parmesan cheese, marinara sauce, diced chicken, garlic, red pepper flakes, as well as salt and pepper to taste.
Fill the inside of each pepper half with the chicken and cheese mixture.
Top the stuffed peppers with the remaining cup of mozzarella cheese.
Cover the baking dish with aluminum foil, and bake covered for 50 minutes.
Remove the aluminum foil, and broil the peppers for about a minute until the tops are browned.
Garnish with grated parmesan cheese and chopped parsley.
