Ingredients 

  • 1 ½ pounds lean ground beef, 80/20
  • 1 onion, diced
  • 1 tbsp. minced garlic
  • 3 green bell peppers, diced
  • 1 can fire roasted tomatoes
  • 3/4 cup white rice
  • 2 cups beef broth
  • 2 Tbsp. tomato paste
  • 1 tsp. Italian seasoning
  • 1 Tsp. Smoked paprika
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 1/2 cups cheese

Instructions

  • In a large skillet add your ground beef, diced onions, and minced garlic.
  • Toss to combine.
  • Cook on medium heat until the meat is brown and the onions are translucent.
  • Once cooked, drain your ground beef of any excess grease.
  • Add the bell peppers, beef broth, can of fire-roasted tomatoes, rice, Italian seasoning, smoked paprika, tomato paste, salt, and pepper.
  • Toss until combined.
  • Cook on medium for 5-7 minutes, stirring often.
  • Turn the heat down to low.
  • Cover the skillet and simmer on low for 18 minutes.
  • Add cheese to the skillet on top of the pepper mixture.
  • Cover the skillet and allow the cheese to melt.
  • Gransh and enjoy! .
