Ground Beef Stuffed Pepper Skillet

Ground Beef Stuffed Pepper Skillet

Prep Time: 10 min | Cook Time: 25 min | Total Time: 35 min | Yield: 4-5

Ingredients:

1 ½ pounds lean ground beef, 80/20

1 onion, diced

1 tbsp. minced garlic

3 green bell peppers, diced

1 can fire-roasted tomatoes

3/4 cup white rice

2 cups beef broth

2 Tbsp. tomato paste

1 tsp. Italian seasoning

1 Tsp. Smoked paprika

1/2 tsp. salt

1/4 tsp. black pepper

1 1/2 cups cheese

How to make Ground Beef Stuffed Pepper Skillet:

Step 1. In a large skillet add your ground beef, diced onions, and minced garlic.

Step 2. Toss to combine.

Step 3. Cook on medium heat until the meat is brown and the onions are translucent.

Step 4. Once cooked, drain your ground beef of any excess grease.

Step 5. Add the bell peppers, beef broth, can of fire-roasted tomatoes, rice, Italian seasoning, smoked paprika, tomato paste, salt, and pepper.

Step 6. Toss until combined.

Step 7. Cook on medium for 5-7 minutes, stirring often.

Step 8. Turn the heat down to low.

Step 9. Cover the skillet and simmer on low for 18 minutes.

Step 10. Add cheese to the skillet on top of the pepper mixture.

Step 11. Cover the skillet and allow the cheese to melt.

Step 12. Garnish and enjoy!
