Mashed Sweet Potatoes lightly sweetened with maple syrup and brown sugar. Sweet potatoes are not just for holidays anymore! My husband and I enjoy sweet potatoes all year round. I swear, as much as we eat them you would think we were from the South!
It is one of my favorite side dishes and desserts (sweet potato pie) to make. Last Sunday I served this side dish along with caramel apple pork chops and corn bread. Next time you are wanting to make a fast and delicious side dish, remember this light and fluffy substitute for regular mashed potatoes.
Maple Mashed Sweet Potatoes
- 6 sweet potatoes, peeled and cubed
- 3/4 cup milk
- 1/2 cup butter
- 3/4 cup maple syrup
- 2 tablespoons brown sugar
Directions:
- Bring a large pot of salted water to a boil. Add potatoes and cook until tender, 20 to 30 minutes.
- In the bowl of a stand mixer with the flat beater attached, blend sweet potatoes. Slowly add milk, about 1/2 a cup at a time. Add butter, maple syrup and brown sugar. Blend until desired consistency.
