Buckeye Peanut Butter Pretzel Bites
My husband and I are huge Ohio State fans and for the game tonight against the Kentucky Wildcats I decided against making regular buckeyes for these addicting Peanut Butter Pretzel Bites. These are essentially a buckeye sandwiched between two pretzels and dipped in chocolate! The sweet and salty combination of these bite-sized snacks is incredible.
Can These Buckeye Chocolate Pretzels Be Frozen?
The finished Buckeye Chocolate Pretzels can not be frozen. The pretzels will soak up the moisture in the freezer and this makes the pretzels taste stale. You can make a batch of the peanut butter filling and this can be frozen. Store it in a freezer bag in the freezer. When you are ready to make the pretzels, you will take the filling out of the freezer and let it thaw. Then you can make the peanut butter pretzels.
Can I Make Peanut Butter Buckeyes with Pretzels Inside Instead?
If you wanted to change this around and make peanut butter buckeyes with bits of pretzels inside that could be a fun twist on this recipe. You will make the peanut butter filling as normal. You want to chop the pretzels into very small pieces to ensure that you can a few pieces in each buckeye ball. Once you have gotten the pretzels into the ball, you will coat it in chocolate as you would for a regular Buckeye.
How to Store Peanut Butter Pretzels
When you make these peanut butter pretzels, you will want to make sure to store them to keep them from going bad. Once the chocolate has hardened, you can store the peanut butter pretzels in an airtight container on in a freezer bag. They will last for about a week when stored well.

You can also use chocolate melts that are available at craft stores or in the cake decorating section. If you wanted to put a twist on these chocolate pretzels, you can buy flavored chocolate chips or use flavored chocolate melts.

How to Make Buckeye Peanut Butter Pretzels
Line a baking sheet with wax paper and set aside.
In the bowl of a stand mixer fitted with the paddle attachment, beat peanut butter and butter until combined. Scrape down bowl, add sugars and beat until combined. You should be able to roll the mixture into balls without sticking to your hands. If needed, add more powdered sugar until you reach a consistency that is easy to roll.
Roll the mixture into small balls, about 1 teaspoon of mixture for each ball, and place on prepared baking sheet. Sandwich the balls between two pretzels and place in the freezer for 30 minutes.
Melt the chocolate in a metal bowl over a pan of lightly simmering water. Stir occasionally until smooth, and remove from heat. Dip each pretzel bite halfway into the melted chocolate and place on the prepared baking sheet. Chill in refrigerator until chocolate is set.
