Coffee Lover’s Chocolate Chip Coffee Cake

Here’s a coffee cake for all those coffee lovers out there! Have a slice with your morning coffee, and you will have your fix for the rest of the day. If you are a coffee addict or know someone who is, you have to make them this coffee cake! Super moist, super delicious sour cream coffee cake exploding with chocolate chips and delicious coffee flavor. The perfect way to kick-start your busy day! 😀

Can I Use Espresso Instead of Instant Coffee? 

You can use espresso if it’s instant. Anything else, then the coffee or espresso won’t properly mix into the batter, and you will be biting into chunks of ground coffee or espresso. I can speak from experience that it’s a bad idea and doesn’t taste good. So, if you find some instant espresso and want to add it in, then by all means, please do! It’s important that you make the recipe the way you like it, so it’s one of your favorites. 

Does This Coffee Cake Need to Be Refrigerated? 

While this coffee cake recipe doesn’t need to be refrigerated, it sure can be! It’s up to you if you prefer it room temperature or chilled. I personally love the texture and flavor of a chilled coffee cake, so I usually keep it in a sealed container in the fridge. Sometimes, if I don’t end up having enough space in the fridge, I will wrap it up and leave it on the counter or put it in the pantry. You can go either way, depending on what you enjoy the most. 

Can I Make This in a Bundt Pan? 

Yes, you can make these chocolate coffee cake in a bundt pan if you wish. I find it’s best to double the recipe if you are making a bundt cake because it’s intended for an 8 x 8 pan normally. Or you will end up with a rather small bundt cake. Before adding the batter to a bundt cake, you need to make sure to grease the pan all the way. This will prevent it from sticking in the pan. Then keep an eye on it, so you bake it long enough. The regular recipe takes 25-30 minutes, but with the bundt pan, you may need to increase the cooking time a fair amount. Start checking it at 30 minutes and add time as needed.

Ingredients

There are two sets of ingredients on this list. There are the filling and topping, as well as the coffee cake itself. Don’t worry; nothing is strange or difficult, though! 

For the Topping and Filling:

  • 1/3 cup sugar
  • 4 ½ teaspoons instant coffee granules
  • 1 ½ teaspoons ground cinnamon

For the Coffee Cake:

    • 1 ½ cups all-purpose flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/8 teaspoon salt
    • 3 tablespoons butter, softened
    • 1/2 cup sugar
    • 1 egg
    • 1 teaspoon vanilla extract
    • 1 cup sour cream
    • 1 cup semi-sweet chocolate chips

How to Make a Coffee Lover’s Chocolate Chip Coffee Cake

Coffee cakes will be forever popular because they are so darn good! Once you taste the combination of chocolate with the coffee cake, you will be in food heaven and won’t’ want to leave. 

First Step: Warm up the oven to 350°. Then add grease an 8-inch square baking pan to prevent sticking and set aside.

Second Step: Begin preparing the topping/filling: Using a small bowl mix together the sugar, coffee granules, and cinnamon, then set aside.

Third Step: Prepare the coffee cake. Using a medium bowl, combine together the flour, baking powder, baking soda, and salt using a whisk then set aside.

Fourth Step: In the bowl of a stand mixer fitted with the paddle attachment, beat butter and sugar until crumbly, about 2 minutes. Mix in the egg and vanilla until combined. Carefully and gradually add the flour mixture alternately with sour cream, beginning and ending with flour mixture. (The batter will be thick, and that is normal)

Fifth Step: Spread half of the batter evenly into the prepared baking pan then sprinkle the batter with half the cinnamon-sugar topping and half the chocolate chips. Spoon the remaining batter in 8 dollops over the batter in the pan and spread gently. Sprinkle with the remaining cinnamon-sugar and chocolate chips.

Sixth Step: Bake the chocolate coffee cake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
