Lemon cake brownies have quickly taken an important spot in my heart. They are so incredible and leave a lasting impression every time I take a bite. When you sink your teeth into one of them, you will feel like you have a piece of summer right in your mouth.
We are known for loving ALL THINGS LEMON at our house. We seriously can’t resist the tangy flavors paired with the sweetness in these lemon brownies.
Next time you are heading out to a party or going to a potluck, make sure you have a batch of these lemonies in your arms. I have found myself making these brownies late at night when a sugar craving hits. I can’t wait for you to taste them, because I am confident you are going to love every bite.
How to Zest And Juice Lemon
If you’ve never zested or juiced a lemon before, don’t stress; it’s super simple. Before you begin, you will need to make the lemon soft. This will allow the zest to come off easier. To me, the easiest method is to take the lemon in your hand and roll it against the counter. Just roll it back and forth for a few minutes, so the lemon seems to soften up. Another method is to microwave it for 10-15 seconds.
Now it’s time to juice the lemon! First, cut the lemon in half. They make all sorts of juicers that you can simply use with your hands. Or you can squeeze the halved lemon in your hand. When juicing, you need to make sure the seeds do not get into the juice or at least remove them if they do.
Zesting is so easy as well. Get a micro plane and simply start scraping it across the outside of the lemon. The skin of the lemon is what makes the zest. You can also use a pairing knife and peel it off into small pieces. You will need to be sure not to get that white layer between the skin and the lemon, or it will be bitter.
Can I Use Bottled Lemon Juice Instead of Fresh
Yep, you sure can. I prefer the flavor of fresh lemon juice, but bottled would also work well. Go with whatever works best for you, and you can’t go wrong.
How to Know When Lemon Brownies are Done
The brownies are done when you can take a toothpick and stick it in the center of the lemonies, and if it comes out clean, then it’s done. If there is still lemon brownie batter on it, they need to bake a little bit longer.
Do Lemon Brownies Need Refrigerated
Yes, you should refrigerate the lemon brownies after they have cooled. First of all, they taste so much better when they are cool. Secondly, they will age a lot better when you store them in the fridge. Keep them in an airtight container, and they will last in the fridge for up to 5 days.
Can You Freeze Brownies
Of course! After the lemon brownies have cooled down all the way, then you can place them in a freezer safe container. A freezer bag or container will both work well. They will last in the freezer for 1-2 months. You can simply defrost them on the counter or put them in the fridge until they are thawed before serving.

You’ll see that there are two separate ingredient lists, one for the brownies and one for the glaze. Many of the ingredients are the same on both lists.
For the Lemon Brownies:
- All purpose flour
- Table salt
- Unsalted butter
- Granulated sugar
- Finely grated zest from 1/2 lemon
- Large eggs
- Fresh lemon juice from 1/2 lemon
For the Lemon Glaze:
- Powdered sugar
- Fresh lemon juice from 1/2 lemon
- Finely grated zest from 1/2 lemon
How to Make Lemon Brownies
Now it’s time to get started making these heavenly brownies! Let’s take a look at the easy steps.
First Step: You’ll need to put the oven rack in the middle position. Then turn on your oven to 350 degrees.
Second Step: Prepare an 8×8″ baking pan by spraying with nonstick spray.
Third Step: Combine the flour and salt together with a whisk in a medium bowl.
Fourth Step: Beat together the butter, lemon zest, and sugar in a stand mixer using the paddle attachment. Mix for 3 minutes or until the mixture becomes light and fluffy. Be sure to scrape down the sides as needed.
Fifth Step: Mix in the eggs one at a time and beat after each egg has been added. Then mix in the lemon juice and turn down the speed to low. Sprinkle in the flour mixture a little at a time until it’s incorporated.
Sixth Step: Take a spoon and spoon the brownie batter into the pan. Smooth out the top.
Seventh Step: Bake the lemon brownies for 22-25 minutes or until you can insert a toothpick and it comes out clean.
Eighth Step: Put the brownie pan on a wire rack to allow it time to cool down to room temperature.
Ninth Step: Prepare the lemon glaze by mixing the sugar, lemon zest, and lemon juice in a small bowl. Whisk until combined, then spread over the top of the pan of lemonies.
Let them cool for 10 minutes, then serve and enjoy!

Instructions
- Adjust oven rack to middle position and heat oven to 350 degrees. Spray an 8” x 8” pan with nonstick cooking spray.
- Whisk flour and salt together in medium bowl; set aside.
- In stand mixer fitted with paddle attachment, beat butter, sugar, and lemon zest at medium speed until light and fluffy, about 3 minutes, scraping down sides and bottom of bowl with rubber spatula. Add eggs 1 at a time, beating well after each addition, about 20 seconds. Add lemon juice and mix to combine. Reduce speed to low and flour mixture, mixing until incorporated.
- Spoon batter into prepared pan and smooth top.
- Bake until skewer inserted into brownies comes out clean, 22 to 25 minutes. Cool in pan on wire rack to room temperature.
- To make the lemon glaze, in a small bowl, whisk together the confectioners’ sugar, lemon juice and lemon zest. Spread over brownies and let harden, about 10 minutes, before serving.
