What can I use instead of heavy cream in caramels?

If you don’t have heavy cream and are looking for a good substitute to add to your creamy caramels, you can use a bit of milk and some tapioca starch or cornflour to thicken the caramels. 

Why is my caramel not creamy?

Skipping the heavy cream will cause your caramel mixture to become runny, and lacking that creaminess and richness. 

Can you substitute milk for cream in caramel?

Yes, you can! Just remember that you will need to add a bit of a thickener like tapioca starch or cornflour into it too, to bring in a bit of that thick, chewy texture.

The best part about these creamy caramels is the fact that they’re the perfect little bite-sized treat you can make and indulge in. You don’t need to put any extra effort into serving them- just hand them over or unwrap them and enjoy. 

Tips

Ready to give these rich caramels a shot? You might want to have these little tips and tricks handy. 

  • One of the key steps to getting the buttery caramels to have the right texture and consistency is ensuring the mixture is at the right temperature. To do this, you’ll have to use a candy thermometer. 
  • If you can, stick to using a good quality stainless steel pot to make these smooth and creamy caramels. Using non-stick pots or those with enamel on them is not something I would recommend. 
  • Remember not to turn the heat up or down too quickly while cooking the caramels. Doing this can cause the butter to separate from the mixture and ruin the texture of the caramels. 

Variations

  • To balance out the creaminess and sweetness of these caramels, you can also add a dash of salt (ideally sea salt) into the mix. 
  • If you prefer a bit of texture to your chewy caramels, you can also add some vanilla granules scraped off from a vanilla bean into the mixture.

  • Vanilla 
  • Brown sugar
  • Granulated sugar
  • Evaporated milk
  • Light corn syrup
  • Heavy whipping cream
  • Butter

How to make creamy Buttery Caramels:

Step 1. Melt the butter in a saucepan over medium heat.

Step 3. Stir in the evaporated milk

Step 7. Let cool to room temperature, and then chill until hardened. 

Step 8. Slice into caramels and serve.

Your creamy caramels can be stored at room temperature in a cool and dark place. You can wrap them individually in wax paper or pre-cut wrappers that you can find online. 

These can then be transferred to an airtight container or a jar and shelved until you’re ready to grab one (or more of them).
