When making a bean salad, some people have asked if canned beans are healthy. Yes, canned beans are healthy. If you want to make them even more healthy, you can buy the no salt added or low salt options. This does not change the flavor or taste of the beans but it does take out a lot of the sodium out of the beans. That makes a healthier salad.
Should I rinse canned beans for this salad
I always rinse my beans when I am using them in any recipe. I think it is more of a personal choice. I do not like the liquid residue that is left on the beans. I also like to rinse the beans because it removes more of the salt. If you like that part of the beans, or just forget to rinse them, the salad will still taste fantastic.
How Long is Greek Bean Salad good?
This Greek Bean salad should be stored in the refrigerator. Make sure it is in an airtight container or a bowl that is wrapped well with plastic wrap. When stored properly, this 4 bean salad will stay good in the refrigerator for up to 3 days.
Can Bean Salad be frozen?
If you find that you will have more bean salad than you can finish in the next few days, you can certainly freeze the recipe. Be sure to store it correctly and this salad will last up to 3 months in the freezer. The best way I have found to store bean salad in the freezer is to use a freezer bag, laid flat, that has all of the air removed. This is a great way to have been salad on hand whenever you need it or to save the salad from going bad.

- chickpeas
- white beans
- light red beans
- fresh green beans
- grape tomatoes
- cucumber
- red onion
- Mediterranean medley olives
- feta cheese
- garlic
- extra virgin olive oil
- red wine vinegar
- salt
- ground black pepper
How to make Greek 4 bean salad
Wash and dry green beans. Break off ends off and cut into 1-inch pieces.
Bring water to a boil over high heat. Once boiling, add green beans for 5 minutes.
Drain and rinse immediately with cool water until no longer warm.
Cut grape tomatoes in half.
Chop cucumber and onion into bite-size pieces.

Slice olives. The small ones can be cut in half, the larger cut into thirds.
In a large mixing bowl, add all of the ingredients and toss to coat.
Serve immediately or store in the refrigerator until ready to serve.

- 15 oz can white beans
- 15 oz can light red beans
- 2 C. chopped fresh green beans
- 1 pt container grape tomatoes
- 2 C. chopped cucumber
- ½ C. chopped red onion
- 1 C. pitted and sliced Mediterranean medley olives
- 1 4 oz container crumbled feta cheese
- 2 cloves garlic, finely minced
- ¾ C. extra virgin olive oil
- ½ C. red wine vinegar
- ½ tsp salt
- 1 tsp ground black pepper
