What can I use instead of heavy cream in caramel?
You can substitute milk and cornstarch for heavy cream in caramel: I T for ½ cup milk. You can also use a mixture of milk and butter (1/8 C melted butter with ½ C milk). Other substitutes are cream cheese, coconut cream or evaporated milk.
Can you melt the caramel without cream?
You can melt the caramel without cream. You do need to use a liquid in which to melt the caramel. Milk is the best option, but water works almost just as well.
How to Serve Amazing Caramel Sauce
What is ice cream without caramel sauce? Spoon scoops of ice cream into individual bowls and pour the caramel sauce over it.
Drizzle caramel sauce over banana pancakes. Add even more flavor by adding shaved chocolate.
Switch things up and use caramel sauce as the basis of a creamy, mustard sauce to go with steak.
Cooking Tips:
- Don’t cook the sauce over high heat, or the sugar could burn.
- Where possible, use a double boiler – or a stainless steel bowl suspended over a saucepan, in which there is a shallow layer of water you keep simmering consistently.
- Whisk or stir the sauce, as directed, so that it doesn’t burn, but also so that the ingredients meld with each other properly.
- Don’t add the butter until the sugar is properly melted.
Variations:
- Substitute one tablespoon of melted baking chocolate for one tablespoon of milk. This will give the caramel sauce a subtle chocolatey flavor.
- To spice up the caramel sauce a little, you can add a tablespoon of rum, or a sweet liqueur, like Amarula.
- Substitute half the cream with condensed milk, to give the sauce a smoother texture and sweeter taste.

- Butter cut into tablespoon pieces
- Heavy whipping cream
- Salt
How To Make This Amazing Caramel Sauce:
Step 1. Heat the sugar in a saucepan over medium-high heat on the stove.
Whisk often to prevent it from burning.
It will ball up and eventually melt into a deep brown color.
Step 2. Once completely melted, stir in the butter. Whisk quickly and continuously until the butter and sugar are completely combined. Boil for 1 minute after they are combined.
Step 3. Slowly whisk in the heavy whipping cream. Boil for one minute without stirring once all of the creams have been added.
Step 4. Remove the mixture from the heat.
Stir in the salt, and let the mixture cool.
The sauce thickens and hardens as it cools. Store in an airtight container in the fridge until ready to use.

Caramel sauce can be stored successfully in the fridge. Pour the sauce into a sealed plastic container and keep it until you’re ready to use it. You can also freeze home-made caramel sauce, but I suggest you do so in small quantities, so you don’t have to thaw and heat up a whole jug full unnecessarily.

The trick with reheating amazing caramel sauce is not to allow the sauce to sit at the bottom of a saucepan, or it may burn. Keep the heat low and stir constantly while the sauce is heating up.
