Bourbon Pecan Chicken

Bourbon Pecan Chicken

Prep Time: 15 minutes | Cook Time: 20-25 minutes | Servings: 4

Ingredients:

4 thin-cut boneless skinless chicken breasts

6 Tbsp. Butter divided

1 C. FInely chopped pecans divided

½ C. Bread crumbs

2 Tbsp. Honey

2 Tbsp. Dijon mustard

⅓ C. Heavy whipping cream

2 Tbsp. Bourbon

Salt and pepper to taste

Instructions:

Mix together 1 tbsp of the dijon mustard and 1 tbsp of the honey in a bowl until well combined.

Place ⅔ cup of the chopped pecans into a Ziploc bag with the breadcrumbs and shake to combine.

Season the chicken breasts with salt and pepper.

Slater the honey dijon mixture over the chicken breasts on both sides.

Place the chicken breasts into the Ziploc bag and coat well in the pecan mixture.

Preheat the oven to 375 degrees.

Melt 4 Tbsp of the butter in a large skillet over medium-high heat on the stove.

Sear the chicken for several minutes on each side until browned.

Place the chicken into a 9×13 baking dish and bake in the oven for 15 minutes, or until the chicken reaches an internal temperature of 165 degrees.

While the chicken is baking, reduce the heat on the skillet to medium.

Stir in the remaining 2 tbsp of butter, 1 tbsp honey, 1 tbsp dijon mustard, and 2 tbsp of the bourbon. Whisk to combine.

Pour in the heavy whipping cream and salt and pepper to taste. Saute until the sauce thickens.

Stir in the last ⅓ cup of the pecans.

Remove the chicken from the oven, top with the bourbon pecan mixture and serve.
