Bourbon chicken is one of my ultimate favorite chicken dishes ever! I will never get tired of how flavorful it is and the fact that it’s sweet with a little bit of spicy as well. We make honey bourbon chicken at least once every couple of weeks.
We can’t help it; it’s one of our family’s favorite dishes because it is so delicious, and the chicken is soft and juicy every single time.
If you love foods that are sweet and savory all at the same time, then I know you’re going to love this instant pot bourbon chicken. You can take it to a potluck, family dinner party, or even serve it at a birthday party.
Can I Use Bone-in Chicken
Yes, technically you can use bone-in chicken if you prefer. I personally do not like to use bone in chicken for this bourbon chicken recipe because I don’t want to have to deal with the bones when I’m trying to eat it. However, if you prefer meat with bones or you catch a good deal for chicken on sale, then go ahead and make it with bones.
Tips for Making Bourbon Chicken In Instant Pot
I have a few tips for you to teach you how to make this bourbon chicken perfectly every time. First, add all of the sauce ingredients to the bottom of the instant pot. This will prevent the chicken from sticking to the bottom of the pot. Allow the chicken to release naturally for 5 minutes after it is done cooking. Then you’ll need to finish with a quick release.
If you allow it to cook for too long using the natural release method, the chicken will turn out more tough instead of tender and juicy.
Additionally, you can feel free to add any of your favorite toppings on top of the bourbon chicken. We usually use sesame seeds, but you could also do chopped green onions or a little bit of freshly grated ginger.
Does This Recipe Freeze Well
Yes, you can absolutely freeze this honey bourbon chicken. You will need to let the chicken cool off for a little bit after it is done cooking. Then you can place it into individual size serving containers for play sit in one large container. Add a lid to the container and put it in the freezer for up to three months. You will need to thaw out before heating it up.
I recommend storing it in the refrigerator the night before you’re ready to serve it.

How To Make Bourbon Chicken

Step 1: Begin by making sure the chicken is dry. Use a paper towel to pat it dry then set it aside.
Step 2: Pour in the apple juice, bourbon, soy sauce, brown sugar, ketchup, honey, red pepper flakes, garlic, and ginger into the instant pot. Mix well to combine.
Step 3: Add the chicken to the instant pot and be sure to coat all of the pieces, so they’re covered in the bourbon sauce. Next, add in all of the vegetables on top of the chicken. Add the lid to the pot and turn the release valve to the sealing position.
Step 4: Turn the instant pot on manual and cook for 12 minutes. While and bourbon chicken is cooking, take a small bowl and add cornstarch and cold water together.
Step 5: After the chicken has finished cooking, allow it to do a natural release for 5 minutes. Then finish with a quick release. Take the chicken and vegetables out of the instant pot and set them aside.
Step 6: Next, you’ll need to turn the instant pot to the saute setting an ad in the cornstarch mixture. Then take a whisk and stir until the sauce has thickened up. Add the chicken and vegetables back to the instant pot and turn it off.
Top with sesame seeds and enjoy!

- 3 lbs boneless skinless chicken thighs
- 1 cup chop broccoli
- 1 red pepper and green pepper, sliced
- 3 tbsp. Cornstarch
- Garnish with sesame seeds
- 1/2 tsp. Ginger paste
- 1 tbsp. Minced garlic
- 1/2 tsp. crushed red chili flakes
- 1/3 cup apple juice
- 1 1/2 tbsp. honey
- 1/4 cup brown sugar
- 1/4 cup ketchup
- 3 tbsp. cider vinegar
- 1/4 cup water
- 1/4 cup Bourbon
- 1/4 cup soy sauce
- salt & pepper to taste

- Prep your chicken and pat dry, set to the side.
- Add your apple juice, Bourbon, soy sauce, brown sugar, ketchup, honey, crushed red pepper flakes, fresh garlic, and ginger to your Instant Pot.

- Once the chicken is done cooking, allow it to naturally release for 5 minutes.
- Then do a quick release.
- Remove the chicken and vegetables and set to the side.
Eave remaining sauce in the Instant Pot.
- Turn your Instant Pot to saute and slowly add in the cornstarch mixture.
- Using your whisk, mix until thickened.
- Return chicken and vegetables to the sauce.
- Turn the instant pot off.
- Top with sesame seeds and enjoy!
