Catch a Husband Cake

If you like coconut you’ll definitely love this Catch a Husband Cake. This recipe is surprisingly easy to make, you just need to mix all the cake ingredients together and you’re good to go!
Now, this isn’t a traditional American cake or a typical light and fluffy cake. In fact, it doesn’t look like a real cake since it is not spongy. It looks more like a flan with more consistency.
Compared to a conventional cake, it is a very dense and moist cake, with a texture similar to a heavy cheesecake. This recipe may confuse you, so you just need to make sure to bake the cake until lightly browned on top and when a toothpick comes out clean. Even if it looks dry, the cake will still be very moist and creamy if you don’t over-bake it.
You will notice that the flavor is unique, the light coconut flavor in the cake and the coconut flakes on the top make this cake delicious!
Ingredients for the cake:
1 can Condensed Milk
1 can Evaporated Milk
1 cup Coconut Milk
2 ½ cups Flour
1/2 cup Sugar
3 Eggs
3 tbsp Butter
Ingredients for the icing:
1 cup Coconut Milk
2 tbsp Sugar
1 cup Coconut (Shredded)

How to make the cake:
Step 1: In a big blender, blend half of all ingredients for the cake.
Step 2: Put the blended mixture in a big bowl and then blend the other half of the ingredients.
Step 3: Put the other half of the blended mixture in the same bowl and mix together with a whisk.
Step 4: Add the blended mixture in a greased and floured Bundt pan.
Step 5: Bake at 350º F / 175º C for 45 minutes or until golden brown. Insert a toothpick in the cake, if it comes out clean remove the cake from the oven.
Step 6: Carefully remove the cake from the pan. Run a soft spatula around the edges of the cake, then invert a serving plate on top of the pan. In one quick motion, flip the cake upside-down.
How to make the icing:
Step 1: In a small-medium saucepan, put the coconut milk, sugar and grated coconut and stir.
Step 2: Bring to a boil and remove from the heat. Let it cool for 5 minutes and then pour over the cake.
