Not a fan of chocolate chip cookies? No problem, you can adapt any of your favorite cookie recipes for this giant pizza cookie. White chocolate macadamia, double fudge, peanut butter cookies, they will all work, just make sure you adjust the cooking time as needed.
Cookie Pizza Pro Tips
- Make sure you cream the butter and sugar together for at least 3 minutes. It’s common for recipes to say you only need 60 seconds but to properly cream the butter it should be at least 3 minutes on HIGH.
- Use a parchment round on the bottom of the pan. Save yourself the headache and just use one, it makes removing the pizza much easier.
- Let the pizza cool until it’s firm, it’s tempting to slice it while it is warm but it may fall apart.
Leftovers and Freezing Tips
Store leftover cookie pizza in an airtight container. This cookie will stay fresh on the counter at room temperature for 2 days, or in the fridge for up to 5 days.
For longer term storage wrap the cookie tightly in plastic wrap and place in a freezer bag. Freeze for up to 2 months.
