This sweet and delicious cranberry recipe is so good and yummy to put together. The best part about this Cream Cheese Cranberry Loaf is it needs no yeast, it doesn’t require any kneading and you don’t have to wait for it to rise. While it has a similar texture to muffins, it’s as sweet as cake.

The tart cranberries and sweet cream cheese bread is the perfect combo. It’s tender, soft and quick and easy to make. Grab a cup of coffee, slap on some butter to the bread and you have the perfect afternoon snack. Or warm it up and serve it after dinner. It’s good even for breakfast!

Cream Cheese Cranberry Loaf

Grocery List:

2 cups flour

2 cups cranberries, fresh or frozen

1 1/2 cups sugar

1 cup (2 sticks) unsalted butter, room temperature

1 (8 oz.) package cream cheese, room temperature

4 eggs, room temperature

1 1/2 teaspoon vanilla extract

1 1/2 teaspoons baking soda

1/2 teaspoon salt

How Do You Make It? Let’s Get to Baking!

Step 1: Preheat your oven to 350º F. Lightly grease a 9 x 5-inch loaf pan with non-stick spray or butter.

Step 2: Use a mixer and combine butter, cream cheese and sugar in a large bowl. Beat in eggs, one at a time and vanilla.

Step 3: In a separate bowl, you will want to whisk together the baking soda, flour and salt. Once combined, slowly mix the dry ingredients together with the wet ingredients. Make sure you stir until it’s completely combined together.

Step 4: Now you will want to gently fold in cranberries before pouring your mixture into your prepared baking dish.

Step 5: Time to bake! Place your loaf into the oven and bake for about 60 – 70 minutes. You will know it’s done by placing a toothpick into the center. If it comes out clean, you can remove it from the oven. Don’t forget to let it cook about 15 minutes before serving.

Do I Have To Make it One Loaf?

No, you don’t. If desired, you could use 2 loaf pans or even a bundt cake pan or turn them into bars. Whatever is desired for your family! You just need the right pan to bake it. Bundt pan or even turn them into bars, whatever works for you.
