I think I’ve made it pretty clear that here at Sweet Pea’s Kitchen, I am obsessed with all foods related to St Patrick’s Day. Can you blame me, though? All this brightly colored food is so vibrant and full of flavor; it’s hard to resist eating it. Besides, I love entertaining people and throwing parties. I’m guessing you probably already know that. That’s why I spend a lot of time making fun and playful desserts.
Adults and kids are more than happy to eat these lucky charm mint chocolate chip cookies. I’ve never had anyone turn me down unless they simply couldn’t eat sugar or didn’t like mint. So, what do you say? Are you ready to head in the kitchen and make this St. Patricks Day cookie recipe? I promise you aren’t going to regret it.
Honestly, I simply love to eat cookies. It doesn’t matter what the holiday is what the event is, you can almost bet money that I am going to be bringing some kind of dessert, and a lot of times it is cookies. I know there are other people out there just like me who have a total Sweet Tooth all the time.
Can I Leave the Mint Out Of The Recipe
Yes, if you are not a fan of mint, you can easily leave the mint extract out of the Lucky Charms cookie dough.
It’s not a problem at all, and I know that there are a lot of people that aren’t fans of mint. If you or someone you’re serving isn’t a fan of mint, the cookies are still going to be decadent and delicious. - 3/4 C sugar
- One egg
- 3/4 TSP peppermint extract
- 3-4 drops green food coloring
- 1 1/2 C flour
- 1/2 TSP baking soda
- 1 TSP baking powder
- 1 TSP cream of tartar
- 1/4 TSP salt
- 1 C mint chocolate chips
- 1 1/2 C Lucky charms cereal (Marshmallows)
How to Make Lucky Charms Cookies
Are you ready to make these game-changing cookies? I think you’re going to be surprised by how simple they are to make. Okay, let’s get going.
First Step: Preheat the oven to 350 degrees. And then grease your baking sheet and set aside.
Second Step: Cream the butter and sugar together with a stand or hand mixer. This takes 2-4 minutes.
Third Step: Add the egg, extract and food coloring and mix until the color is fully combined. You can make as light or as bright as you would like.
Fourth Step: Add the flour, baking soda, baking powder, cream of tartar, and salt.
Fifth Step: Once fully combined, fold in the chocolate chips and lucky charms marshmallows.
Sixth Step: Roll into small balls and place them on a cookie sheet. I used a cookie scoop to get the same size of cookies.
Seventh Step: Bake the Lucky Charm cookies for 10 minutes. Let the cookies cool for 2 minutes before transferring to a cooling rack.
