I can honestly say I was nervous about this recipe. I love pizza and love casseroles, but putting the two together was new to me. I had to try it and amazingly, with a few minor adjustments, this Pepperoni Pizza Casserole was not only filling and comforting, but it also tasted great!

You could use any type of pasta that you prefer. I like the shell macaroni, elbow macaroni or even rotini in this casserole.
Can I use pizza sauce instead of tomato sauce?
Pizza sauce can be used in a pinch. Be aware, however, that your dish will be a little saltier compared to if you used tomato sauce.

- Turkey (Ground)
- Yellow Onion
- Garlic
- Tomato Sauce
- Fire Roasted Tomatoes
- Olive Oil
- Low Carb Rotini Pasta
- Italian Seasoning
- Non-Fat Mozzarella Cheese
- Reduced-Fat Mozzarella Cheese
- Turkey Pepperoni

Directions:
Step 1. Preheat the oven to 350 degrees.
Step 2. Prep a 9 x 13-inch baking dish with non-stick baking spray.
Step 3. Cook the pasta until it is al dente, drain it and set it aside.
Step 4. Add the ground turkey, onion, and garlic to a large skillet with olive oil over medium-high heat.
Step 5. Cook until the meat is browned. Drain any fat as needed. Reduce the heat to low.
Step 6. Add tomato sauce, fire-roasted tomatoes, and seasoning. Stir until blended.
Step 7. Add to a large bowl. Add one cup of shredded cheese and 16 pieces of turkey pepperoni.
Step 8. Transfer to the prepared baking dish. Sprinkle the remaining shredded cheese on top.
Step 9. Place the rest of the pepperoni on top. Loosely cover the baking dish with foil.
Step 10. Bake at 350 degrees for 20 minutes. Take out of the oven and remove the foil.
Step 11. Return to the oven and bake for an additional 10 minutes. Serve.

- 1 Bag, 12 oz Low Carb Rotini Pasta
- 1 tsp Italian Seasoning
- 1 cup Non-Fat Mozzarella Cheese, Shredded
- 1 cup Reduced-Fat Mozzarella Cheese, Shredded
- 1 Small Package Turkey Pepperoni, 32 Slices

Instructions
