Ingredients:
1 Lb. Turkey (Ground)
1 Yellow Onion (Chopped)
1 tsp Garlic (Minced)
1 (16 oz) Can Tomato Sauce (No Sugar Added)
1 (16 oz) Can Fire Roasted Tomatoes (Drained)
2 tsp Olive Oil
1 Bag (12 oz) Low Carb Rotini Pasta
1 tsp Italian Seasoning
1 cup Non-Fat Mozzarella Cheese (Shredded)
1 cup Reduced-Fat Mozzarella Cheese (Shredded)
1 Small Package (32 Slices) Turkey Pepperoni
Directions:
Step 1. Preheat oven to 350 degrees.
Step 2. Prep a 9 x 13 inch baking dish with non-stick baking spray.
Step 3. Cook the pasta until it is al dente, drain it and set it aside.
Step 4. Add the ground turkey, onion, and garlic in a large skillet with olive oil over medium-high heat.
Step 5. Cook until the meat is browned. Drain any fat as needed. Reduce the heat to low.
Step 6. Add tomato sauce, fire roasted tomatoes, and seasoning. Stir until blended.
Step 7. Add to a large bowl. Add one cup of shredded cheese and 16 pieces of turkey pepperoni.
Step 8. Transfer to the prepared baking dish. Sprinkle the remaining shredded cheese on top.
Step 9. Place the rest of the pepperoni on top. Loosely cover the baking dish with foil.
Step 10. Bake at 350 degrees for 20 minutes. Take out of the oven and remove the foil.
Step 11. Return to the oven and bake for an additional 10 minutes. Serve.
