Pineapple Chicken Kebabs

Hawaiian Chicken Kabobs loaded with juicy, flavorful chicken, caramelized pineapple, and crispy veggies!

Ingredients:
¼ C. Ketchup
¼ C. Soy sauce
¼ C. Pineapple juice
3 Tbsp. Honey
1 Tbsp. Rice wine vinegar
3 tsp. Minced garlic
¼ tsp. Ground ginger
2 Tbsp. Olive oil
Salt and pepper to taste
2 lbs. Chicken breast cut into bite-sized pieces
1 Red onion chopped into large pieces
1 Bell pepper chopped into large pieces
2-3 C. Pineapple chunks fresh or canned
Wooden skewers
How to make Pineapple Chicken Kebabs:
Step 1. Add the ketchup, soy sauce, pineapple juice, honey, rice wine vinegar, minced garlic, ground ginger and oil to a bowl, and whisk until well combined.

Step 2. Place the cut-up chicken into a Ziploc bag, and pour the sauce mixture over it. Close the bag, and place into the refrigerator to marinate for at least one hour.
Step 3. Preheat your indoor or outdoor grill, and brush it with oil.
Step 4. If using wooden skewers on an outside grill, soak them in water before preparing them.
Step 5. Fill the skewers with chunks of onion, pepper, the marinated chicken and pineapple chunks.
Step 6. Cook the skewers on the grill until the chicken is cooked completely through, about 10 minutes.
