This Snickerdoodle Bread is one of my favorite things to bake. It fills my house with a delish aroma, and it’s just so irresistible.

What’s There to Love About This Snickerdoodle Bread Recipe?
You mean besides the flavor and aroma, right? Ha! Well, the highlight for me is that I don’t have to work with yeast. That’s right. NO YEAST. So, if you’re a beginner-level baker, it’s time to shine.
Hate to tell you, but there’s also a bummer. Cinnamon chips are seasonal. So, it’s going to be a little hard finding them. I’d say stock up whenever and where ever you see them. These are a treasure.
How Can I Get a Good Rise?
No matter where on your baking journey you’re at, you can always use some tips, right? So, here’s what has always worked for me.
- Don’t overfill the pan. If you fill it to the brim (and you’d want to, it’s just so tempting), your bread will collapse because there’s no room to rise.
- Grease the oven. Always, always, always! You want the batter to cling to the top portion of the pan, so grease the lower bottom.
If you notice a crack down the middle, kiss your hands! You’re getting there.
Snickerdoodle Bread Variations
There’s so much you can do to this recipe. It’s amazing. I’ve tried a few of these:
- Bake mini loaves in aluminum mini loaf pans.
- Make muffins instead of a bread loaf. You can expect about 20 easily.
- When we didn’t have cinnamon chips, we tossed in some toffee chips and butterscotch chips instead. They were beautiful. You can also do old-school raisins and chopped nuts. Chocolate chips are a great option as well.
What Can I Serve with Snickerdoodle Bread?
It’s already sweet and tasty, so I love to serve it as is. But for a little more wow, serve it with a dollop of whipped cream. You can also try a scoop of your favorite ice cream. Yum!
Ingredients:
- All-purpose flour
- Granulated sugar
- Cinnamon
- Baking powder
- Butter unsalted and melted
- Nonfat Greek yogurt
- Vanilla extract
- Eggs
- ⅔ C. Cinnamon baking chips
How to make Snickerdoodle Bread:
Step 1. Preheat the oven to 350 degrees.
Step 2. In a mixing bowl, combine all of the ingredients except the baking chips. Beat on high until smooth.
Start by adding All-purpose flour.
Then add the granulated sugar.
Then add the baking powder.
Then add the cinnamon.
Then pour in the butter unsalted and melted.
Then add vanilla extract.
Then add the greek yogurt, I use nonfat.
Step 3. Fold the baking chips into the batter.
Step 4. Spread the batter in an even layer in a well-greased loaf pan.
Step 5. Bake for 40-50 minutes until cooked through.

Instructions

Can I Make The Bread Ahead of Time?
You can always prepare your batter in advance. It’ll stay good in the fridge for up to 24 hours. But because it’s chilled now, you’ll have to add a few extra baking minutes.
How to Store Snickerdoodle Bread?
Covered at room temperature – perfect! It’ll be fresh to enjoy for 4 to 5 days. You can also pop it in the fridge (of course, covered well) to add some extra days to the shelf life.
Can I Freeze Snickerdoodle Bread?
Yes! This sweet quick-bread freezes beautifully. Once you bake and cool it, wrap it in plastic wrap/freezer paper/aluminum foil and freeze it for up to 3 months.
