Yummy cucumber bites! This is my version of a healthy snack or appetizer. This simple cucumber bites meal is refreshing, flavorful and seriously bite-sized. These bites are super cute, healthy and really easy to make.
This is such an easy recipe, all you need to do is slice cucumbers into bite-sized pieces and top with your favorite dip or dressing and then garnish with half of a cherry tomato. To make this the best cucumber bites recipe, I strongly suggest following the ingredients list! However, for additional homemade cucumber bites ideas, consider the following notes and substitutions:
Cream cheese: I recommend using full-fat cream cheese for flavor and texture. But, if you’re a fan of low-fat or reduced-fat cream cheese, feel free to swap the original cream cheese with your preferred type. You can also incorporate various flavors of cream cheese, such as green onions or a dip-flavored cream cheese, depending on your palette.
Ranch dressing: Ranch dressing is a staple in this snack! If you’re feeling up to it, try making your own homemade ranch dressing (with a packet, some mayo, and heavy whipping cream). You’ll never want to go back to store-bought ranch dressing once you familiarize yourself with making your very own.
Cherry tomatoes: Swap the cherry tomatoes for your favorite type of tomato. You can use any kind, but cherry tomatoes are typically best as they’re small in size—making them perfect for these cucumber bites.
How to Make It
Step 1. Cut the cucumbers into 1-inch slices. Use a melon baller to spoon out a half-moon shape from the top of each cucumber slice.

Step 2. In a bowl, add the cream cheese, dill, salt, and pepper to taste.

Step 3. Then, add ranch dressing and blend together until smooth and creamy.

Step 4. Pipe some of the cream cheese mixture into the empty section of each cucumber slice. You can use a Ziploc bag to make this step much easier if you don’t have any piping equipment at home.

Step 4. Place a half slice of cherry tomato in the center of each cucumber bite and serve. Yes, it’s really that simple. You can also add various toppings, such as sesame seeds, additional seasonings (including smoky paprika), and you can top the cherry tomatoes with additional salt and pepper. Just a bit of salt goes a long way when you want to elevate your cucumber bites!

Tips for Success
I would suggest using English cucumbers for these cucumber bites. They are longer than a regular cucumber, and have a thinner skin.
Storage & Reheating
You can store these cucumbers in an airtight container for 1 to 2 days, before the cucumbers become soggy in texture. It’s not advisable to store these cucumber bites in the freezer, as the texture will change immensely, making them soggier when you thaw them out. It’s best to only prepare the amount you plan to eat or take to an event or gathering you’re planning to attend.
There is no need to reheat these cucumber bites. They are best served cold.
Serving Suggestions
I highly suggest serving other appetizers with these cucumber bites! Sure, you can serve these bites with a traditional green or Italian salad, but you can also get creative with additional appetizers. How long can I store these in the refrigerator?
You can place the cucumber bites in an airtight container and then into the refrigerator for up to two days. I do not suggest freezing the cucumbers at all.
Can I make these Cucumber Bites in advance?
You could, however, it is suggested that you do NOT assemble until just before serving. A few hours in advance would be okay, but I do not advise longer than that.
