These cucumber bites are a good cold, vegetarian option to serve either by themselves or with a flute of champagne.

While larger cucumbers will yield more slices, keep in mind that the slices shouldn’t be too wide.

As with sushi, an hors d’oevre should fit elegantly into the mouth.

How to serve Cucumber Bites?
This is all about the presentation. Typically, hors d’oevres are served on a tray. If it’s a fancy situation and you can afford to hire helpers (or talk your friends into helping), a server may go around the room offering hors d’oevres to guests. In less formal settings, the tray may be left at a stationary buffet where the guests can help themselves. Either way, line them up in neat rows. Keep the presentation simple if servers are involved. Otherwise, you can get fancy with paper umbrellas and cocktail toothpicks. Fresh leaves of basil or rosemary make aromatic garnishes. Small flowers and ribbons are pretty garnishes. Radish roses take a little finesse but make for an edible garnish. Red pepper rings and chicory add some zest and keep with the color scheme. You may also serve them with other hors d’oerves for variety in both taste and color.
Cucumber Bites Cooking Tips:
These cream cheese cucumber bites aren’t cooked so much as assembled. Just keep in mind that the ranch dressing and cream cheese should be kept chilled. No one likes warm cucumbers anyway. If you don’t have a piping bag or tube, you can use a plastic bag with a corner snipped off.
Variations of Cucumber Bites:
If you don’t have or don’t like tomatoes, a dash of paprika can add both color and a zap of flavor. If you’re cutting calories, replace the ranch dressing with avocado dressing, hummus, tahini or Greek yogurt mixed with chives, garlic and lemon juice. Neufchatel has a fat content that is 1/3 lower than cream cheese, making it an adequate substitution. Pureed cottage cheese can also replace cream cheese. Some people like sunflower seeds with their vegetables, so it might be good to have a few of these on hand.

Cucumber Bites Ingredients
- Cream cheese
- Fresh dill chopped
- Ranch dressing
- Cucumbers cut into 1-inch sliced
- Cherry tomatoes sliced in half lengthwise
- Salt and pepper to taste
How to Make Cucumber Bites
Step 1. Cut the cucumbers into 1-inch slices. Use a melon baller to spoon out a half-moon shape from the top of each cucumber slice.

Step 2. In a bowl, add together the cream cheese, dill and salt, and pepper to taste.

Step 3. Then, add ranch dressing and blend together until smooth and creamy.

Step 4. Pipe some of the cream cheese mixtures into the empty section of each cucumber slice.

Step 4. Place a half slice of cherry tomato in the center of each cucumber bite and serve.

How to store Cucumber Bites?
They should be kept cold, but not too cold! Put them in an air-tight container and store them in the front of the refrigerator away from any cooling elements.
How much does Cucumber Bites last on the fridge?
The cottage cheese based dressing should last five days to a week. If they smell wrong, throw them out.
Can I make ahead Cucumber Bites?
They can be made ahead, if they are kept chilled just before serving. If you can chill the tray they’ll be served on, that would be ideal. If you are using servers, see that they have handkerchiefs to handle the trays.
