Variations

If you do not have much time, you could use a store-bought cake mix. However, the homemade will always taste fresher. Be sure to make the icing yourself. It just is not the same taste when everything is pre-made.

Could I make the frosting thicker?

You could make a thicker frosting if you wanted to. I prefer the simple Peanut Butter icing.

Ingredients:

  • Butter
  • Oil
  • White sugar
  • Eggs
  • Vanilla extract
  • Flour
  • Baking powder
  • Salt
  • Milk

Peanut Butter Frosting Ingredients:

  • White sugar
  • Milk
  • Shortening
  • Butter
  • Salt
  • Vanilla
  • Peanut butter

How to make Yellow Cake with Peanut butter Frosting:

Step 1. Preheat oven to 350F

Step 2. Grease and line a 9” x 13” casserole dish. Set aside.

Step 3. In a large bowl, beat together the butter, oil, and sugar until light.

Mix until completely combined.

Step 4. Add eggs, one at a time, beating after each addition, then the vanilla extract. Set aside.

Step 5. In a medium-sized bowl, stir together the flour, baking powder, and salt.

Step 6. Gently fold half of the flour mixture into the butter mixture, then the milk, then the remaining flour mixture.

Step 7. Pour the batter into your prepared casserole dish and bake for 35-40 minutes, until an inserted toothpick comes out clean.

Step 8. While the cake is cooling, prepare your peanut butter frosting.

Step 9. In a large saucepan over medium-high heat, combine the sugar, milk, butter, shortening, and salt.

Step 10. Stir constantly until the mixture reaches a boil, then allow to boil for 2-3 minutes without stirring.

Step 11. Remove the saucepan from heat and stir in the vanilla and peanut butter.

Step 12. Pour the frosting over the cake.

Then, use an offset spatula to ensure that the frosting covers the cake evenly.

Step 13. Allow the frosting to set for 20 minutes before cutting into the cake.

  • 1/2 cup oil
  • 1/2 cups white sugar
  • 4 eggs, room temperature
  • 2 teaspoons vanilla extract
  • 3 cups flour
  • 1 Tablespoon baking powder
  • 1 teaspoon salt
  • 1 1/4 cups milk, room temperature

Peanut Butter Frosting Ingredients:

  • 1 1/2 cups white sugar
  • 1/2 cup milk
  • 2 Tablespoons shortening
  • 2 Tablespoons butter
  • 1 teaspoon salt, optional
  • 1 teaspoon vanilla
  • 1/2 cup peanut butter

How should I store this Yellow Cake with Peanut Butter Frosting?

While serving the cake, you can leave it on the counter for a few hours. However, if you are not going to serve the entire cake right away it is best to cover the cake with plastic wrap and store it in the refrigerator. You can leave the cake in the refrigerator for 4 days. Trust me…you won’t have cake left for that long.

Can I freeze this cake?

It would be best to freeze the cake with no icing if you do need to freeze it. You can bake the cake, cool it to room temperature and then wrap it tightly and store it in the freezer for 2 months.
