Peanut Butter Truffle Brownies

Peanut Butter Truffle Brownies with three layers of rich and decadent goodness! A rich, fudgy, deep dark chocolate brownie with a delicious peanut butter filling that is topped off with a decadent chocolate ganache. Oh yes, the classic peanut butter and chocolate combination! This dessert is incredible!

I made these brownies to celebrate my husband getting a job! After 4 years of undergrad, 4 years of medical school, 4 years of a pathology residency and one year of a dermatopathology fellowship-he scores a real job! Woo hoo!! :) It has been a long road and I have been right there beside him for almost the whole ride (over nine years)! After months of interviewing and agonizing we will begin the next chapter of our lives this July in Peoria, Illinois. For the past five years we have called Indianapolis home and I am very sad to leave so many friends and a job that I love, but I am very excited to see what the future has in store for us! :)

Peanut Butter Truffle Brownies

A rich, fudgy, deep dark chocolate brownie with a delicious peanut butter filling that is topped off with a decadent chocolate ganache.

Yield: 24 brownies

Ingredients:

For the Brownies:
1 cup butter
2 cups sugar
3 eggs
3 teaspoons vanilla
2/3 cup cocoa powder
1 cup all purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder

For the Peanut Butter Filling:
1/2 cup butter, softened
1/2 cup creamy peanut butter
2 cup powdered sugar
2-3 teaspoons milk

For the Ganache Topping:
1/4 cup creamy peanut butter
2 cups semisweet chocolate chips
1/4 cup butter
2 tablespoons heavy whipping cream

Directions:

Preheat oven to 350F. Butter the bottom and sides of a 9 by 13 inch metal baking pan. Put a long piece of parchment paper in the bottom of the pan, letting the parchment extend up two sides of the pan and overhang slightly on both ends. (This will make it easy to remove the bars from the pan after they have baked.) Butter the parchment.
In a medium saucepan over medium heat, melt the butter. Remove from heat and add the sugar; stir to combine. Beat in eggs and vanilla until combined. Mix in cocoa, baking powder and salt. Add flour and stir until just combined and no streaks of dry ingredients remain. Pour into prepared pan and spread into an even layer. Bake for bake 25-30 minutes. Let cool completely in pan on a cooling rack.
While the brownies are cooling, make the peanut butter filling. In the bowl of a stand mixer fitted with the paddle attachment, combine the ingredients and beat until smooth. Add more milk if necessary to make it spreadable. Spread in an even layer over the brownies. Place in the refrigerator until filling is set, about 30 minutes.
While the filling is setting, make the ganache, combine the ingredients in a double boiler or in a microwave safe bowl. Melt together and combine. Pour the ganache over the top and spread gently. Return to the fridge until set.

    Christina… Congratulations to you and your husband! I understand what you mean by 4 years of undergrad… med school… residency… and fellowship, my sister is a doctor and I saw her go thru all of it. It was painful watching my sister and I could only imagine what you went thru as a spouse. And now all I can say is YOU GUYS HAVE MADE IT! :-) You are a good wife who was by his side for 9 years which is no joke… and I wish you both continued success, now it’ll all pay off! :-) Oh and these brownies look soooooooooooooo good, maybe i can try and lower the fat.     I spent a chunk of my last summer in Peoria, IL. It’s an ok place, hope you end up liking it! Congrats on the new job, and I’m totally excited to try these, they seem really similar to a brownie my fave cafe makes, except with a fluffy espresso filling in the middle.     Has anyone actually made these yet? I made them this morning. I’m not done yet, but concerned. The brownies are considerably thicker than the picture – at least double the thickness. I wonder what will happen when i spread the peanut butter on…..oh boy….

      I am sorry to hear that the brownies did not come out very well. :( One of the possible reasons that the brownies were much thicker could be that they were mixed too much. Beat just enough to mix the ingredients together, over beating will cause them to rise too much as they cook.
      As far as the brownies needing to stay refrigerated, I am surprised to hear this. I kept mine in an air tight container at room temperature and they stayed perfect for a few days. Was it the ganache on top that made these brownies need to stay refrigerated? If so, you can try eliminating the heavy whipping cream and that will give it a firmer ganache layer. The two tablespoons that I recommended for the ganache will give it a smooth and creamy texture, but it shouldn’t need to stay refrigerated. I hope that this failed recipe doesn’t discourage you from trying other recipes or this particular recipe again. If you do give these a try with the suggestions that I mentioned, I would love to hear how it turns out for you! :)

    I just made these the other day, and WOW! They are fantastic! One of the most decadent, delicious recipes I have ever made. My brownies weren’t as dark as yours so they didn’t come out quite as pretty, but they still tasted fantastic. I will make these again and again :)

    I just made these brownies and they are amazing! I live in England so it took me a while to work out how to convert the cup measurements to grams, but boy it was worth it!

    Although I liberally buttered the parchment paper like you said, most of the brownie layer still got stuck during cutting. I was sad for about 5 minutes, but then I tasted the final product. I am no PB fan myself (I was making this for a friend and was bummed that mine didn’t turn out pretty like yours), but these tasted amazing! PB in a chocolate ganache = genius! (my friend loved it as well…happy day!). Next time maybe I’ll just skip the parchment paper altogether. Thank you for the recipe, Christina :)
