Apple Cinnamon Oatmeal Cookies with Apple Cider Glaze

I know you aren’t technically supposed to eat cookies for breakfast, but these cinnamon oatmeal cookies are so good once in a while I will sneak a couple as a breakfast treat. I mean, they aren’t any sweeter than a donut or cinnamon roll…right?  Plus, they have oatmeal, and that’s totally a breakfast food. 🙂 

For real, though, eating these apple cinnamon cookies is one of my favorite treats because they are so good. I have never had anyone tell me that they didn’t like them. This apple cookie recipe stands out because they are different and tasty too. Keep reading to find out how you can make your own apple spice cookies.

Apple Cinnamon Oatmeal Cookies Ingredients

Everything about these cinnamon oatmeal cookies is easy! They don’t take much effort to prepare or bake, and they taste like they are made in a gourmet cookie shop. Take a look at the simple ingredients you need to make a batch or two of these cookies. 

For the Cookies:

  • All-purpose flour
  • Old fashioned oats
  • Baking powder
  • Baking soda
  • Salt
  • Ground cinnamon
  • Allspice
  • Nutmeg
  • Apple
  • Fresh lemon juice
  • Unsalted butter
  • Granulated sugar
  • Dark brown sugar, packed
  • Egg
  • Vanilla extract
  • Chopped walnuts

For the Apple Cider Glaze:

  • Confectioners sugar
  • Apple cider vinegar

How To Make Apple Oatmeal Cookies

Other than devouring the freshly baked cookies, my favorite part of baking is the aroma while they are in the oven. These cookies are spicy, and they smell heavenly as they bake. You are going to want your home to smell like these easy oatmeal cinnamon cookies. Yum!

First Step: Place the oven racks, so it’s in the middle position. Preheat the oven to 350 degrees F. Using parchment paper, line two baking sheets and set them aside. 

Second Step: Mix together the flour, oatmeal, baking powder, baking soda, salt, cinnamon, allspice, and nutmeg by whisking in a large bowl. Set aside for later use. 

Third Step: Place the diced apples in a small bowl and sprinkle fresh lemon juice on top. Stir and set aside. 

Fourth Step: Cream the butter, granulated sugar, and dark brown sugar together in a stand mixer with the paddle attachment. Beat until light and fluffy, which is usually around 3 minutes. Mix in the egg, then the vanilla at medium speed. Mix until everything is combined. Then add in the flour and oatmeal mixture slowly. Continue mixing at low speed until the ingredients are combined and wet. If needed, scrape down the side of the bowl. Mix in the apples and walnuts using a rubber spatula. 

Fifth Step: Using rounded tablespoons drop cookie dough balls onto the prepared cookies sheets. Leave at least 2 inches between the cookies. Bake, one pan of cookies at a time for 10-13 minutes or until the cookies, are a golden brown color, and the bottoms have set up.

Sixth Step: Place the baking sheet on a wire rack and let the cookies cool for 5 minutes. Then transfer the cookies to the cooling rack using a wide metal spatula. 

Seventh Step: While the cookies are cooling, prepare the apple cider glaze. Mix the confectioners sugar and apple cider in a small bowl. Drizzle the apple cider glaze over the top of the cookies. Serve and enjoy!

Cinnamon Oatmeal Cookies Variations

As always, there are several different variations you can try with this apple cinnamon cookies recipe. Of course, you can make them just the way they are written, but I love giving you some options to try as well. Take a look at some yummy ideas to try:

  • Raisins – Add 1/4 – 1/2 cup of raisins to the cookie dough batter. Fold them in with the apples, and they will add a flavorful, chewy element to the cookies. 
  • Dried Cranberries – I love spicy cookies with dried cranberries, so I figured I would give it a try, and it turned out beautifully! If you love cranberries, you will go crazy for this fun idea. 
  • Butterscotch Chips – If you are a fan of butterscotch oatmeal cookies, then you already know that oatmeal and butterscotch go hand in hand. I would start with 1/4 cup, so it’s not too overpowering. 
  • Cinnamon Sugar – Roll the cookies into balls and roll them around in a bowl of cinnamon and sugar. It almost gives them the feel of a snickerdoodle and trust me when I say that they are heavenly! 
  • White Chocolate Chips – Doesn’t chocolate make the world go round? Add in some white chocolate to make them even more decadent!

How Do You Store Apple Oatmeal Cookies?

Always store the apple cinnamon oatmeal cookies in an airtight container. Keep them away from the steam of your dishwasher, heat from the oven, or out of the sunlight. The cookies will last anywhere from 3-4 days on the counter or in your pantry. You can refrigerate them if you like them better cold, but it’s not required. 

Can You Freeze Apple Cinnamon Oatmeal Cookies?

Yes, you can quickly freeze these apple spice cookies. Just put them in a freezer-safe bag or airtight storage container. Usually, the apple cookies will last around 2-3 months in the freezer. Just take how many cookies you want out of the freezer and set them on the counter to thaw out, then you can eat them.

Ingredients 

For the Cookies:

  • 1 cup all-purpose flour
  • 1 1/4 cup old fashioned oats
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon allspice
  • Pinch freshly grated nutmeg
  • 1 medium apple, cored, peeled, diced small
  • 1 teaspoon fresh lemon juice
  • 1/2 cup 1 stick unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup dark brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup coarsely chopped walnuts

For the Apple Cider Glaze:

  • 1 cup confectioners sugar
  • 2 tablespoons apple cider

Instructions

  • In a small bowl, toss diced apples and lemon juice together; set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream butter and sugars until light and fluffy, about 3 minutes. Add egg and vanilla and beat at medium speed until combined, about 30 seconds. Add the dry ingredients and beat at low speed until just combined, about 30 seconds, scraping down the bowl as needed. Fold in apples and walnuts with a rubber spatula.
  • Drop by rounded tablespoons onto prepared baking sheets, about 2 inches apart. Bake one sheet at a time, 10 to 13 minutes, or until the bottoms are a light golden color.
  • Transfer the baking sheet to a wire rack and let the cookies cool on the sheet for 5 minutes then using a wide metal spatula, transfer the cookies to the rack to cool completely.
  • To make apple cider glaze, in a small bowl, combine the confectioners’ sugar and apple cider. Drizzle over cookies.
