Notes

Christmas was always a special time in our home. Not exactly alone in that, of course, but it was when my mom had enough time to cook. Both my parents worked a lot, and we often had to fend for ourselves. It was nice in one way because I learned to cook during this time. However, I missed out on a lot of bonding time with my mom and dad.

However, during Christmas, mom would take two weeks off work (saved all her vacation time, actually) and we’d do nothing but bake, bake, and bake!

Turns out, she’s an amazing chef when she wants! One of the first things I ever learned to make with her was this pineapple cheese ball recipe.

As a result, it always has a special place in my heart, and I am so happy to share it with you!
