What is a strawberry cobbler?

Strawberry cobbler is an old fashioned dessert named after the “cobbled” look the batter gets as it cooks around the fruit. This easy cobbler is the perfect recipe for summer when the local strawberries are fresh and ripe.  A biscuit like vanilla crumb on the bottom, and fresh jammy strawberries throughout, this crumbly cobbler is buttery and fragrant, a perfect dessert to serve with vanilla ice cream or whipped cream.

What is in a Strawberry Cobbler?

  • fresh strawberries
  • sugar
  • cornstarch
  • lemon juice
  • all-purpose flour
  • baking powder
  • salt
  • whole milk
  • vanilla extract
  • Butter

What to Serve With Strawberry Cobbler

Cobbler can be served on its own as a fruity buttery dessert. For extra indulgence serve cobbler topped with fruit cut berries, whipped cream, or ice cream.

What is the difference between a cobbler and a crisp?

The batter used in a cobbler is denser and more biscuit like than the batter in a crisp. A crisp generally contains oats making it crispier and lighter than a cobbler.

Recipe Variations

Cobbler can be made with pretty much any fruit you can think of. Some of my favorite types of cobbler are peach, cherry, or raspberry but you can use any of your favorite fruit or a combination of multiple fruits to make an easy cobbler dessert.

Can you make this cobbler gluten free?

All of the gluten in this recipe comes from the wheat flour, to make this cobbler gluten free, replace the flour in the recipe with your preferred gluten free flour.

Recipe Tips

  • Avoid overworking the batter, mix until everything is just combined. Over working will form gluten making the batter tougher and chewier, you want it fluffy and delicate.
  • Use the freshest ripest strawberries you can find. Ripe strawberries are sweet smelling, a deep red color throughout, and softer to the touch. 
  • Don’t mix the strawberries into the batter, just lay them on top and let it bake!
  • For a firmer cobbler, let it rest for 15 minutes after coming out of the oven.
  • In place of fresh strawberries use frozen strawberries to save time.

Leftovers and Reheating

Let the cobbler cool completely to room temperature and place any leftover in an airtight container. Store in the fridge for up to 4 days.

You can serve leftover cobbler cold or place the cobber in an oven safe dish and rebake at 350°F until warmed through.

Freezer Tips

To freeze cobbler, allow it to cool completely to room temperature. Wrap tightly in plastic wrap or tin foil and place in a resealable freezer bag. Freeze for up to 3 months. Allow the cobbler to thaw completely in the fridge before reheating and serving.

Ingredients 

  • 2 pounds fresh strawberries, stemmed and quartered
  • cups granulated sugar, divided, plus extra for topping
  • 2 tablespoons cornstarch
  • 2 teaspoons lemon juice
  • 1 cup all-purpose flour
  • teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • ½ cup butter, melted and cooled

Instructions

  • Pre-heat the oven to 350°F and grease an 8×11 baking dish with butter or oil, set aside.
  • Add the quartered strawberries, ½ cup of sugar, cornstarch and lemon juice to a bowl and combine well.
  • In another large bowl, combine the remaining 1 cup of sugar, flour, baking powder salt, milk, and vanilla extract. Whisk everything together and then slowly pour in the melted butter in while whisking.
  • Pour the batter into the prepared baking pan and top with the strawberry mixture. Bake for 40-45 minutes until the crumb is golden brown.
