Lemon Cobbler, like most cobblers, is a treat that has a fruit filling and a cake or biscuit like topping. There are many variations of cobbler, and if it is cobbler to you, that is all that matters. I have a variety of recipes, with different types of crusts, or topping layers. I would be hard pressed to choose just one as a favorite. I can tell you that I do love all things lemon!

Generally, the crust for a cobbler is made with simple ingredients such as flour, sugar, buttermilk, vanilla, and salt. Again, there are many different types of toppings.

Could I use Lemon Curd versus Lemon Pie Filling?

You can substitute Lemon Curd in place of Lemon Pie filling. The Lemon curd tends to be richer in lemon flavor than the pie filling is.

Can I thicken a Cobbler filling?

Certainly! You can use CornStarch or flour with water to thicken the sauce if it is needed. Generally, pie fillings or Curds are thick enough for a cobbler dessert.

What to Serve with Lemon Cobbler?

Lemon cobbler can be served with whipped cream, vanilla ice cream, or a drizzle of honey.

Ingredients for Lemon Cobbler:

  • Unsalted butter
  • Flour
  • Granulated sugar
  • Buttermilk
  • Vanilla extract
  • Lemon zest
  • Lemon pie filling
  • Lemon curd

How to make Lemon Cobbler:

Step 1. Preheat the oven to 350 degrees

Step 2. In a small bowl melt the butter in the microwave.

Step 3. Pour the butter into a 9×9 baking dish.

Step 4. Make sure to spread the butter evenly.

Step 5. In a large bowl add the flour, sugar, buttermilk, vanilla, and lemon zest.

Step 6. Whisk until combined.

Step 7. Pour the buttermilk batter evenly into the buttered baking dish.

Step 8. Lightly spread the batter over the whole baking dish.

Step 9. In a small bowl add the lemon pie filling and lemon cured, and stir to combine.

Step 10. Pour the lemon mixture over the buttermilk batter. Do not stir.

Step 11. Bake for 55 to 60 minutes.

Step 12. Remove from the oven and set to the side.

Step 13. Garnish with powdered sugar or ice cream if desired.

  • 2 tbsp. lemon zest, approx. 2 lemons
  • 1 22 oz can of lemon pie filling
  • ½ cup of lemon curd

Do I need to store this in the refrigerator?

I believe this Lemon Cobbler is best when stored in the refrigerator. You do need to cover it tightly or place it in an airtight container. Lemon Cobbler can be stored in the refrigerator for 3 or 4 days.

Can I freeze this Lemon Cobbler?

I do not suggest freezing this dessert. There will be an obvious texture difference in the lemon when it thaws.
