In that case, you will need to know how to ripen bananas faster. There are a few ways to ripen bananas faster than letting it happen on its own.
If you know you want the bananas to ripen in a few days, you can put the bananas in a paper bag and fold over the top lightly. Add an apple or a very ripened banana. This will ripen the new bananas in a day or two.
If you don’t have other fruit to help the banana along or want to have the riped banana faster, you can freeze the bananas for a few hours. Otherwise, you can also ripen the bananas by using the oven. Peel the bananas and put it on a baking sheet for 15- 20 minutes in a 250 oven. If you make this cookie dough the day before, you can store it, wrapped well or in an airtight container, in the refrigerator.
Baked cookies will last about two to three weeks when stored properly. To store cookies, store them in an airtight container or in a freezer bag. This prevents the cookies from exposure to the air which lets them stay fresh longer.
How Long Will This Last as Frozen Cookie Dough
One of the best things about cookie dough is that you can freeze it for later. Whenever I want to make a batch of cookies, I like to double the recipe. Doubling the recipe lets me make one batch of cookies, bake half and leave the other half for later. You know when you need fresh baked cookies at the last minute: For example, a last-minute party invite or the kids needs to bring in a snack for the class or just because everyone is craving fresh homemade cookies. When you make cookie dough and freeze it, it will stay good in the freezer for about 3 months. When freezing the cookie batter as a whole, wrap the cookie dough well and put it in an airtight container or freezer bag. If you want to make the cookies even easier for later, scoop the cookies and have them ready for the oven. Place the cookie dough balls in the freezer on a cookie sheet to give them time to freeze. Once frozen, put all of the cookie dough balls into a freezer bag.
This will prevent them from sticking together. When ready to bake, bake cookies for an extra minute or two when baking them from frozen.

How to Make Banana Peanut Butter Cookies
Step 1. Preheat the oven to 350 degrees. Line a baking pan with parchment paper and set aside.
Step 2. In a bowl combine the peanut butter with the sugar and baking powder.
Step 3. Mix in the mashed banana, beating until everything is well incorporated.
Step 4. Drop tablespoonfuls of dough into the baking pan and take to the oven.
Step 5. Bake for 10 minutes or until golden brown. Remove from the oven and let them cool down completely.
