Carrot Salad

Carrot, cucumber and radishes to make this classic salad that’s healthy and refreshing!
Very simple carrot salad with few ingredients! SO GOOD.
So delicious and great for outdoor gatherings! Find recipe card at the bottom.
Ingredients:
1 cucumber
1 carrot
3-4 radishes
2 Tablespoons cilantro, chopped
2 Tablespoons olive oil
Salt and pepper, to taste
1 Tablespoon lime juice, optional
Directions:
Using a mandolin or a sharp kitchen knife, slice the cucumber, carrot, and radishes into thin slices.
Place in a bowl and add the chopped ciltantro.

Add the oil and salt and pepper to taste. Toss the salad until well coated.
And
Add in the lime juice, as desired.
