I love this chicken pesto bake recipe because it’s light in my pocket. On the month-end days when my pantry is almost dead, I can still make this chicken pesto bake because it needs just 5 ingredients. This is my quick fix for unexpected guests who barge in without notifying me.
Does Pesto Work With Chicken?
Just work? It works pretty awesomely with chicken. Both chicken and pesto complement each other so well that one enhances the flavor of the other. The mild pesto flavor can bring up the flavor of a plain chicken breast and vice versa.
How Long Does It Take To Cook Chicken In The Oven?
Boneless and skinless chicken breasts would take around 20 to 30 minutes in an oven at 375 degrees F. On the other hand, bone-in and skin-on chicken breast can take up to 35 to 40 minutes to cook properly at the same temperature.
Do You Bake Chicken Covered Or Uncovered?
For my chicken pesto bake recipe, I don’t mind baking it uncovered. It’s totally fine. You can bake it either way!
Tips:
- Do not overlook the chicken, or else it can get dry and lose its flavor.
- Use freshly grated mozzarella cheese so that it melts properly.
- Be generous with the cheese and toppings to enhance the flavor.
Ingredients:
- Chicken Breasts In Half Lengthwise
- Low Fat Low-Calorie Basil Pesto
- Mozzarella Cheese
- Tomato
- Salt And Pepper To Taste
- Parmesan Cheese
How to make this Chicken Pesto Bake:
Step 1. Preheat the oven to 400 degrees.
Step 2. Season the chicken pieces with salt and pepper to taste, and place onto a baking sheet.
Step 3. Top each piece of chicken with a teaspoon of the pesto. Bake for 15 minutes
Step 4. Top the chicken pieces with slices of tomato.
Then, add the mozzarella cheese. Bake for 5 minutes longer.
Step 5. Garnish with the parmesan cheese before serving.

- 6 oz. Mozzarella Cheese, Shredded
