What to Serve With a Mug Cookie

Tips for Making a Mug Cookie
- Make sure there is extra room in the mug for the cookie to rise when cooking or it may overflow and create a mess.
- Any large ceramic mug without any metal on it can be used for this recipe. In place of a mug a ramekin or microwave-safe bowl can be used for this mug cookie recipe.
- Some microwaves cook faster or slower than others so keep an eye on the cookie. It may need more or less cooking than 1 minute. Somewhere between 45 seconds and 1 minute seems to work well for most microwaves.
- Avoid overcooking or the cookie may become tough as it cools. You know the cookie is done when it puffs up in the container and appears dry. It’s normal for the cookie to flatten a little bit as it cools.
- This recipe is easily scalable for bigger containers, however you may need to adjust the cooking time for double batches.
- The mug may be very hot after cooking so be careful and use oven mitts if needed to remove the cookie from the microwave.
Storage Tips
This recipe is best enjoyed fresh from the microwave. It’s so quick and easy there is really no reason to make this treat ahead of time.
If you do have any leftover cookie, store it in the fridge sealed for up to 2 days.

Cookie in a Mug
Ingredients
- tablespoon unsalted butter
- 4 teaspoons packed light brown sugar
- 1 tablespoon granulated sugar
- ¼ teaspoon vanilla extract
- Pinch of salt
- 1 egg yolk
- 3 tablespoons all-purpose flour
- 2 tablespoons semisweet chocolatechips

Instructions
- Melt the butter in a microwave safe dish for 25-30 seconds.
- Add the sugar, vanilla, and salt to the melted butter. Stir to combine and add the egg yolk, mixing until smooth.
- Add the flour and the majority of the chocolate chips, saving a few to top the cookie. Mix to combine well and sprinkle with remaining chocolate chips.
- Pour batter into a mug and cook on HIGH for 45 to 60 seconds until the cookie has risen and is no longer wet and goopy.
- Allow the cookie to cool for several minutes before serving.
