It’s best to use Italian ground sausage to get the full effect. While you could use regular Italian sausage, it will affect the texture of the soup.

We prefer to use baby gold potatoes! The texture is great, and they don’t become grainy like other varieties of potatoes. You can also use Russet.

When you begin cooking this Italian sausage soup, you’ll need to cook the sausage until it’s done all the way.

Can I use other vegetables in this soup?

Yep! Consider adding onions, peppers, tomatoes, sun-dried tomatoes, or any other veggies that you enjoy in your soup. Just make sure to cook until the vegetables are tender.

Can I substitute the Italian sausage with another type of meat?

Sure! Chicken, beef, or turkey are all great options.

Should I use low-sodium broth in this soup recipe?

It’s fine to use regular broth or a low-sodium broth, depending on your preference. If you are cutting back on your salt intake, for sure, go with low sodium. Otherwise, use whatever you like.

How much liquid should I use in the soup?

You’ll use 7 cups of liquid in this soup recipe—six cups of chicken broth along with one cup of heavy cream.

How long should I simmer the soup?

It will need to simmer for about 20-22 minutes.

Can I add additional herbs and spices to the soup?

Sure, any of these spices and herbs would work well.

  • Oregano
  • Parsley
  • Thyme
  • Bay Leaf
  • Onion Powder
  • Garlic Powder

What is the best way to thicken the soup?

When you add the heavy cream to the soup it will thicken some. If you’d like it a little thicker add 1/2 cup of cornstarch to 1/2 cup cold water. Stir well and slowly add to the soup. Repeat as needed until you reach desired texture. Stir frequently to prevent it from burning.

Can I make this soup ahead of time?

Yep! Feel free to make the potato Italian sausage soup up to 4 days in advance. Refrigerate until you are ready to reheat. Reheat on the stovetop in a pot or in the microwave for single servings.

Can I freeze the soup for later use?

While you can freeze the soup, keep in mind that freezing will cause the texture of the potatoes to become more grainy. So, it’s best to eat it within 4 days of cooking. Otherwise, freeze it for up to 3 months and thaw it in the fridge before reheating.

What toppings can I add to the soup?

Green onions, sour cream, or fresh herbs are all tasty toppings. You can also add crackers or warm bread on the side.
