You already know how much I love decorating food to go with the various holidays. This decorated Easter cake was a vision that came to me and I knew I had to make it. It did take a little bit of practice, but once I got it all figured out it was amazing.

There is no way I couldn’t no share it with you.

We took this easy Easter cake to our family get-together last year and everyone was shocked by how cute it is. The kids could barely keep their fingers out of it because it just summoned them to eat it. It was no surprise that we didn’t have a single crumb leftover. It was actually so good that I had to make another one because I missed out on that day.

But the good news is that it’s super easy to make so I didn’t mind making another one at all. 

Can I Use Homemade Cake Instead Of Box 

Oh yes, using a homemade cake instead of boxed cake is a fabulous idea. I like to use cake mix sometimes because it’s quick and easy and I almost always have some on hand. I usually buy several anytime they go on sale, so I can use them in some of my recipes.

It’s a quick fix that ends up tasting heavenly. Homemade cake is wonderful as well, so if you have a favorite recipe, feel free to use it.

How to Store Easter Cake 

After the cake has cooled and is decorated, then you’ll need to keep it in a sealed container. If you use a cake container or purchase a cake box, they would both work. You just need to keep it away from any kind of heat or sunlight because it will not be good for the cake. I actually like to keep it chilled in the fridge because it tastes better and it helps the frosting when it stays cold. 

Can I Make This Cake In Advance 

Yes, you can make this Easter cake in advance. This bird nest layered cake will actually last up to 5 days after it’s baked. So keep it stored airtight and you shouldn’t have any problems. If you need to make multiple cakes for large gatherings, you can set them at room temperature or chill them in the fridge depending on your needs.

How Do You Toast Coconut 

Toasting coconut is pretty simple. There are a couple of choices and both work well. You could either put the coconut in a skillet on the stovetop and stir it constantly. Use medium heat and stir until it is toasted to the coloring you are aiming for. 

Another option is to bake the coconut in the oven. Turn the oven to 325 degrees F. and spread it out on a cookie sheet or baking pan. Bake for 8-10 minutes or until it’s toasted. Then allow it to cool for a few minutes and then you can use it for the Easter cake or your other favorite recipes. 

Ingredients

Vanilla cake mix
Large eggs
Water
Canola oil
(3) 9inch round cake pans
(3) 10inch round cake board
Pam baking spray
Vanilla frosting
Unsalted butter, softened
Powdered sugar
Pure vanilla extract
Heavy whipping cream
Sky Blue gel food coloring
Toasted coconut
Speckled whopper egg candies
(1) mini angled spatula
(1) medium ice cream scooper

Brown gel food coloring
Wide stiff paintbrush

How To Make A Layered Easter Cake 

  1. Warm up the oven to 350 degrees F. Then spray all 3 cake pans with non-stick baking spray
  2. Start by preparing the vanilla cake batter by using a hand mixer or stand mixer. 
  3. After the cake batter is ready, pour it into the 3 pans, and bake for around 28-32 minutes or until the cakes are fully baked. 
  4. Once the cakes are finished, place all of them on a cooling rack to cool completely. 
  5. Use a cake leveler and to cut off any domes on the baked cakes. 
  6. Using a standing mixer, combine the butter, powdered sugar, vanilla, and heavy whipping cream until mixed well. It should be smooth and stiff with peaks. 
  7. Mix in a few drops of sky blue food coloring and mix until combined. 

Building the cake directions

  1. First set out the bottom layer and add about 1 cup of frosting. Spread evenly over the layer of the cake using a knife. Repeat for each layer of the cake.  
  2. Add frosting on the entire edges of the cake with the remaining blue frosting.
  3. Add a bit more frosting in the center of the cake to make a mound for a bird nest. 
  4. Next you’ll need to sprinkle on toasted coconut around the mound to mimic twigs. Place candy eggs in the center of the coconut nest.  

Speckled look directions

  1. Combine together about ¼ tsp of brown food coloring and 2 drops of water into a small bowl.
  2. Dip the tip of a small brush in the food colored mixture. 
  3. Hold the brush about 4-6 inches away from the cake. Quickly fling the brush to make a splatter effect. Flick the brush to give it a speckled look. 
  4. Gently place a few of the speckled malted eggs onto the top center of the nest!
  5. Cut the Easter Cake that is stunning and resembles a Robin egg blue color and enjoy!

Ingredients 

  • 2 boxes of Vanilla cake mix
  • 6 large egg
  • 2 C water
  • 1 C Canola oil
  • 3 9 inch round cake pans
  • 3 10 inch round cake board
  • Pam baking spray
  • Vanilla frosting
  • 2 C unsalted butter, softened
  • 5 C powdered sugar
  • 2 tsp pure vanilla extract
  • 3-6 TBSP heavy whipping cream
  • Sky Blue gel food coloring
  • 3 C toasted coconut
  • 1 C of speckled whopper egg candies
  • 1 mini angled spatula
  • 1 medium ice cream scooper
  • Speckled ingredients
  • Brown gel food coloring
  • Wide stiff paint brush

Instructions

  • Preheat the oven to 350 degrees and spray the 3 cake pans with pam baking spray
  • Start by working on your vanilla cake batter using a hand mixer or stand mixer. 
  • Once your cake batter is ready, divide into the 3 pans, and bake for around 28-32 minutes or until the cakes are fully cooked. 
  • Once your cakes are done, you will place on a cooling rack to cool down. 
  • If you need, grab a cake leveler and use that to cut off any dome on the cakes. 
  • Using a standing mixer, beat together the butter, powdered sugar, vanilla, and heavy whipping cream until combined, smooth and stiff with peaks. 
  • Grab food coloring and mix in a few drops of sky blue food coloring and mix until combined. 
  • Building the cake directions
