This Avocado Chicken Salad is a quick and easy avocado recipe that’s perfect for a healthy, fast lunch.

Ingredients:
2 C. Chopped grilled chicken
2 Large ripe avocados
1 C. Corn kernels
½ C. Green onion chopped
1 C. Bacon crumbles
1 Tbsp. Fresh chopped dill
2 Tbsp. Fresh chopped parsley
¼ tsp. Ground mustard
2 Tbsp. Lemon juice
2 Tbsp. Olive oil
Salt and pepper to taste
How to make Fresh Avocado Chicken Salad:
Step 1. Prep the vegetables, herbs and chicken.
Step 2. Cut the avocados in half lengthwise, remove the pit in the center, and use a spoon to scoop the inside out of each avocado half. Chop the avocado, and set aside the empty shells.
Step 3. In a large mixing bowl, combine the chicken, chopped avocado, corn, green onion, bacon crumbles, dill and parsley.

Step 4. In a small bowl, whisk together the olive oil, lemon juice, ground mustard and salt and pepper to taste.
Step 5. Pour the lemon juice mixture over the chicken and avocado mixture in the large mixing bowl, and toss to coat and combine well.
Step 6. Serve by scooping the salad mixture into the empty avocado shells.
