Why Do We Love Cucumber, Tomato, Avocado Salad?

Well, besides looking full of life and so inviting, the salad is a powerhouse of vitamins and minerals. All three ingredients – cucumbers, tomatoes, and avocados – provide loads of Vitamin C and beta-carotene. Plus, olive oil helps add heart-healthy monounsaturated fats. So, it makes me happy to have something on the menu that’s healthy and for everyone. Kids love it, too! YES!

And it’s a super quick fix. Like, twenty minutes max! And if you have an extra set of hands, you will fly through it.

What Variations Can I Try?

If you want to give this salad a twist, try adding some feta cheese or sliced onions. Or, replace the olive oil with white balsamic vinegar or lemon juice.

You can also add some protein if you like. Grilled chicken cubes or shrimp would be perfect for a light summer dinner.

And if you are looking for a vegan version, try replacing the olive oil with tahini or avocado oil.

You can even trade the tomatoes for grilled red peppers if you like! I once left the tomatoes out and added mangoes instead. It was a BLAST!

What Toppings Can I Use?

For my family, the salad is an organic light-dressing type of deal. But if you like, you can top it with your favorite dressing or sauce.

A creamy yogurt-based dressing works best. Or, a simple vinaigrette with some herbs and spices.

Also, you can sprinkle some crushed nuts or seeds for extra crunch.

This salad will go well with almost any dish. It’s perfect for parties and potlucks, especially when the weather is nice.

I like to serve it as a main dish with some grilled chicken or fish. Or, you can make it part of your lunch box with some crackers or chips.

If there are any leftovers, you can store them in the fridge for a day max. The avocado will turn slightly brown, and the other veggies will be more liquid-y and juicy.

But don’t worry; it still tastes delicious! Just give the salad a good mix before serving, just like you did when you made it. I’d squeeze some lemon and enjoy every bite!

How Can I Utilize the Leftovers?

Okay, so if no one’s paying attention to the no-more-crisp salad, trick them! Make a fresh bed of crisp lettuce and add the leftover salad on top.

You can also cook some pasta, let it cool, and mix it with your leftover tomato avocado salad for a pasta version. My family loved it.
