Ingredients:

For the cookies:

8 oz Chocolate Chips

2 tbsp Butter

2 Large Eggs

1 tsp Vanilla

½ cup Sugar (Granulated)

½ cup All-Purpose Flour

¼ tsp Baking Powder

For the topping:

1 cup Evaporated Milk

8 tbsp Butter

2 Egg Yolks

1 cup sugar (Granulated)

1 tsp Vanilla 

1 cup Pecans (Chopped)

1 cup Coconut (Shredded)

5 oz Chocolate for Drizzle (Melted)

 

Instructions:

Step 1. Preheat the oven to 350 degrees. 

Step 2. In a microwave safe bowl, combine the 2 tbsp butter and the 8 oz chocolate chips. 

a) Heat the mixture at 30 second intervals until completely melted and smooth. 

Step 3. Let the chocolate cool a bit. 

Step 4. In a bowl, whisk together the eggs, 1 tsp vanilla and ½ cup of sugar.

a) Add the eggs.

b) Add the sugar.

c) Add the vanilla.

Step 5. Add the chocolate mixture to the egg mixture, and whisk to combine. 

Step 6. In a mixing bowl, place the flour and baking powder. 

a) Add the flour.

b) Add the baking powder.

Step 7. Mix the chocolate mixture into the dry ingredients and stir until completely combined. 

Step 8. Drop the batter by the teaspoonful onto a parchment-lined baking sheet. Bake for 10 minutes and let cool. 

Step 9. In a saucepan over medium heat, combine the egg yolks, 8 tbsp butter, 1 cup sugar and 1 cup of evaporated milk. Simmer until the mixture thickens well. 

a) Add the yolks.

b) Add the sugar.

c) Add the evaporated milk.

  

Step 10. Remove from the heat and stir in the vanilla, pecans and coconut.

a) Add the vanilla.

b) Add the pecans.

c) Add the coconut.

Step 11. Spoon some of the topping onto each cookie and let set. 

Step 12. Drizzle he melted chocolate over the cookies, chill for 15 minutes and serve. Enjoy!

Instructions
