Grandma’s Hamburger and Vegetable Soup

With all of the overindulging that comes with the holiday season, here’s one recipe that will warm you up without weighing you down.
This is by far the best vegetable soup I have ever eaten!
The rich and flavorful broth is enhanced by roasted vegetables and a full head of garlic.
Prep Time: 15 minutes
Cook Time: 1 hour – 1 hour 10 minutes
Servings: 6
Ingredients:
1 lb. Ground beef
1 Onion chopped
46 oz. Tomato juice
2 Potatoes diced
2 Carrots chopped
1 Can corn undrained
1 Can green beans undrained
Pinch of ginger
Salt and pepper to taste
How to make Grandma’s Hamburger and Vegetable Soup:
Step 1. Brown the ground beef in a large pot over medium-high heat.
Step 2. Drain any excess fat.
Step 3. Add the remaining ingredients to the pot, bring the mixture to a boil, reduce the heat to simmer, cover, and cook for 1 hour.
a. Adding Tomato juice
b. Adding Potatoes *diced
c. Adding Carrots chopped
d. Adding corn undrained
e. Adding green beans undrained
f. cook for 1 hour
