Why is it called pound cake cookies?
These are called pound cake cookies because they have the same ingredients and a very similar taste and texture to traditional pound cake. They are going to be dense, delicious, sweet, and tender.
What is the difference between normal cookies and pound cake cookies?
The biggest difference is that a traditional cookie has baking soda to help lift the cookie and make it puff up, this recipe only has baking powder which is going to lead to a much denser cookie that is still very tender and soft, but that does not puff up.

These cookies are great any time of the day, hot, warm, or cold. They can be served with coffee, tea, as a snack and so much more.

The biggest tip you can follow when making any sort of cookies is to make sure you are not overmixing. Overmixing is what can lead to a very tough cookie. When you overmix cookie dough, the flour develops too much gluten which can make your cookie very hard to chew and not at all appetizing.

You can make a ton of variations with this cookie. You can add different flavors to the glaze, you can add fresh fruit on top, and you can even switch it up with chocolate if you want.
Ingredients:
- Granulated sugar
- Butter
- All-purpose flour
- Baking powder
- Eggs
- Lemon juice
- Vanilla extract
For the glaze:
- Powdered sugar
- Milk to taste
- Vanilla extract
How to make Lemon Pound Cake Cookies:
Step 1. Add the sugar and butter to a mixing bowl and beat until smooth and creamy.
Step 2. Mix in the flour, baking powder, eggs, lemon juice, and vanilla.

Adding the lemon juice.
Beat on high until well combined.
Step 3. Form the dough into 24 evenly sized balls, and flatten them slightly with the palm of your hand.
Step 4. Bake for 10-12 minutes until cooked through and browned on the bottom.
Step 5. Mix together the ingredients for the glaze until smooth.
Then, drizzle over the warm cookies.
Step 6. Let sit for several minutes before serving.
