How to make Reuben Crescent Bake
Step 1. Place the crescent roll dough onto a lightly floured surface and separate it in half. (The flour keeps the dough from sticking to the surface.)
Step 2. Pinch together the perforated edges of the dough
Step 3. Roll half of the dough out until it is a rectangle about 12 inches long.

Step 4. Place the dough onto a baking sheet lined with parchment or a silicone mat and bake for 10 minutes.

Step 5. Remove the crust from the oven and top with four slices of Swiss cheese.

Step 6. Mix the sauerkraut and Thousand Island dressing in a bowl.

Step 7. Place the corned beef on top of the Swiss cheese.

Step 8. Spread the sauerkraut mixture over the corned beef.

Step 9. Top with four more slices of Swiss cheese.

Step 10. Roll out the other half of the dough, and spread it over the mixture, pinching the edges closed around the bottom. Pinching the edges seals the cheese inside the crescent roll and allows the flavors to blend while baking.

Step 11. Bake for 20 minutes longer until the top crescent roll layer is browned.

Tips for Success
The flour keeps the dough from sticking to the surface. Pinching the edges seals the cheese inside the crescent roll and allows the flavors to blend while baking.
Using a silicone mat can be helpful if you plan to prepare the Reuben Crescent Bake in advance. The silicone mat provides more support than parchment, making it easier to transfer it in and out of the refrigerator.
Storage & Reheating
You could prepare it ahead of time and stop before step 11, the final baking. Instead, wrap the prepared food tightly and place it in the refrigerator for up to 24 hours. Before the final baking, allow the Reuben Crescent Bake to warm up to room temperature.
You can store leftovers in an airtight container for up to 4 days. Reheat the Reuben Crescent Bake in the oven at 350°F until warmed through, or microwave individual portions. You can safely freeze the Reuben Crescent Bake for up to 2 months — thaw overnight in the fridge before reheating — though freezing can change the texture of the sauerkraut.
Serving Suggestions
Serve the Reuben Crescent Bake with a variety of side dishes. Potato salad, homemade kettle fries, pickles, tomato soup, and almost any fresh green salad work perfectly with this delicious meal.
