Mandarin Cupcakes

Ingredients:

Refined flour – 130 gms

Baking powder – 1 tsp

Salt – 1/4 tsp

Butter (melted) – 115 grams

Milk (room temperature) – 1/4 cup

Eggs – 2

Orange juice – 2 tbsp

Zest – 1/2 large mandarin

Sugar (powdered) – 150 gms

Curd – 2 tsp

Honey – 2 tsp

Vanilla extract – 1 tsp

How to make Mandarin Cupcakes:

Step 1. In a bowl mix the wet ingredients together. Add the butter and sugar and mix till it changes color. Add the eggs one at a time. Add curd, vanilla extract, honey & mix well.

Step 2. Sift the dry ingredients together (refined flour, salt, baking powder). Add the zest and mix.

Step 3. Start adding the dry mix to the wet mix, alternating it with milk.

Step 4. Lastly, add the orange juice and give it one final mix.

Step 5. Bake at 180°C for 18-20 mins or till a toothpick comes out clean.

Butter Cream Frosting

Ingredients

Butter – 1 cup

Powdered sugar (sifted) – 2 cups

Vanilla extract – 1 tsp

Butter Cream Frosting Method

Step 1. Beat the butter for 4-5 mins at high speed till it becomes light and creamy. Add the vanilla extract and mix.

Step 2. Slowly start adding the sugar little at a time and beat till you get desired consistency. (It should hold shape)

Notes:

Make sure everything is at room temperature.

For the frosting, the butter Should be at room temperature. Sugar should be sifted properly to avoid lumps.

I added orange food color in my frosting for giving it an orange tinge.
