I love adding a little bit of southern charm to my desserts because it makes them utterly irresistible.

Storing Cupcakes 

The best way to store these cupcakes is if you have a cupcake container that has a lid. If not, you can use any kind of plastic or glass food storage container that has a tight-fitting lid, so they are kept airtight. No matter what you keep the cupcakes in, you should keep them chilled in the refrigerator. The frosting has whipping cream, and it will go bad much sooner if you leave the blueberry pie cupcakes at room temperature. The boxed cake mix cupcakes will last for 3-5 days.

Can I Make These In Advance 

Yep! Making these incredible blueberry pie cupcakes in advance is a lovely way to meal prep or save yourself time later. I will often make them a day or two in advance before our party or event, so they are ready to go. You can keep these homemade pie cupcakes in the fridge for 3-5 days. Or you can freeze the unfrosted cupcakes for up to three months. Then add the frosting right before serving them. 

Can I Use Homemade Blueberry Pie Filling 

Of course! I like to buy blueberry pie filling because it saves me a big step. However, if you have a favorite blueberry pie filling recipe, by all means, go ahead and use it. The flavor will be even more incredible and intense with homemade pie filling. If you do use homemade pie filling, we would love to hear your recipe so we can try it next time too!

Can I Swap Out The Flavor of Pie Filling?

Yes, you can easily swap out the blueberry pie filling for any other flavor you enjoy! We love to make them with strawberry pie filling every once in a while. You could also use peach pie filling, cherry pie filling, or even pumpkin pie filling. There really isn’t any wrong ways to enjoy these boxed cake mix cupcakes. The recipe is super versatile and pairs nicely with many other flavors. So, play around with it until you find your favorite blend and go with that! 

Ingredients

You have stumbled across one of the most simple blueberry pie cupcakes recipes ever. They don’t take tons of time or effort, and when you take that first bite, you are going to see fireworks. Speaking of fireworks, these cupcakes would also be great for the summer holidays too! 

One box of Butter Yellow Cake mix

1 C water

1/3 C unsalted butter, softened

Three large eggs

1 Cupcake pan

Cupcake liners

Vanilla Frosting

2 C unsalted butter, softened

4 ½ C powdered sugar

2 tsp pure vanilla extract

3 – 6 Heavy whipping cream

One medium ice cream scooper

1 – 21oz Blueberry pie filling

1 – 13.5 oz graham cracker crumbs

How to Make Blueberry Pie Cupcakes

There are just a handful of instructions for baking and decorating these gorgeous southern cupcakes. Let’s take a look at what you need to do to make a batch. 

First Step: Preheat the oven to 350 degrees and line the cupcake pan with the muffin liners and set aside.

Second Step: Using a hand or standing mixer, mix together all ingredients until combined and mixed well. You will follow the directions on your cake mix batter.

Third Step: Scoop ¾ batter into the liners using a measuring cup or large cookie scoop.

Fourth Step: Bake the cupcakes in the oven for 19 minutes or until a light golden brown. Use a toothpick to make sure the cupcakes are fully cooked.

Fifth Step: Allow cooling completely on a cooling rack.

Vanilla Frosting Directions

First Step: Using a standing mixer, combine together the butter, powdered sugar, heavy whipping cream, and vanilla until smooth and stiff with peaks.

Second Step: Once your frosting is ready, you can frost your cooled cupcakes. Don’t frost them while they are hot, or the frosting will melt. 

Building the cupcake directions:

First Step: Scoop some frosting using the ice cream scoop onto the cupcakes.

Second Step: Pour the box of graham cracker crumbs into a large bowl.

Third Step: Coat the frosting into the crumbs. You can roll the cupcake around on a plate of graham crackers.

Fourth Step: Scoop some blueberry pie filling onto the top center of the cupcake.

Fifth Step: Enjoy!
