This Mexican Tortilla Casserole is not a thing of the past! It is one of the most iconic and savory Mexican dishes that you can make! Layered with seasoned beef, tortillas, beans, and corn, and of course Cheese!
This Mexican Tortilla Casserole is a meal that will fill those tummies at dinner. Taco night is a big deal in our house, however, I do get bored with the same thing each week. I like to switch up the meals, yet stay with the theme.

This Mexican Tortilla Casserole allows me to do just that. My family still has the Mexican food they want and I get the variety I crave. I call it a win-win situation.
Three layers of Taco seasoned filling in three layers of Tortillas smothered in Cheese, it is like the perfect meal! What makes this even better is that it is not difficult to put the Casserole together.
My son is not a cheese fan, but he amazingly loves this recipe!!

Why I love Mexican Tortilla Casserole?
This recipe is simple to follow, easy to make, and tastes Delicious! There are also multiple layers of flavor and healthy ingredients like beans. This is also a great dinner for the family and everyone loves it! Plus I stick with the theme night at our place.
Variations
There are many different variations that you could try. You could use Chicken or another form of protein for the meat, using plant-based ingredients. You could drizzle on a layer of Enchilada Sauce to add flavor and a slight kick. Use a different cheese altogether, such as Pepper Jack.
How to serve Mexican Tortilla Casserole?
To serve Mexican Tortilla Casserole, you can slice it into wedges and serve it on individual plates, or serve it family-style on a large platter or baking dish. You can also serve it with a side of fresh salsa, guacamole, or sour cream for added flavor and texture.
Ingredients:
- Ground beef
- onion chopped
- Refried beans
- Rotel drained
- Prepared rice
- Corn
- Flour tortillas
- Cheddar cheese
- Taco seasoning
- Fresh chopped green onions for garnish
How to make Mexican Tortilla Casserole:
Step 1. Preheat the oven to 350 degrees.
Step 2. Place the ground beef and onion into a skillet over medium-high heat on the stove, and saute until the meat is browned and the onions have softened.
Step 3. Add the taco seasoning to the meat, and saute for a few minutes longer before removing from the heat.
Step 4. Grease a springform pan that is roughly the same size as your flour tortillas.
Step 5. Create layers as follows:
Layer 1: Tortilla, ½ the rice, ½ the Rotel, and a sprinkling of cheese
Adding the rice.
Adding the rotel and cheese.
Layer 2: Tortilla, ⅓ of the beans, ½ of the meat, ½ the corn and sprinkling of cheese.
Adding the beans.
Adding the cheese.
Layer 3: Tortilla, ⅓ of the beans, ⅓ of the meat, ½ the Rotel, and some cheese.
Layer 4: Tortilla, ⅓ of the beans, ⅓ of the meat, ½ the corn, ½ the rice, and some cheese.
Step 6. Place a final flour tortilla on top, and sprinkle with the remaining cheese.
Step 7. Lightly cover the pan with aluminum foil, making sure that it does not touch the cheese on top.
Step 8. Bake for 40 minutes with the foil on, remove, and bake for another 10 without it.
Step 9. Garnish with freshly chopped green onions before serving.

- ½ Can corn drained
- 5 Large flour tortillas
- 2 C. Cheddar cheese

Instructions

How should this dish be stored, if I have any left?
If you are lucky enough to have leftovers, cool them to room temperature and wrap it tightly with aluminum foil. You can then store the Mexican Tortilla Casserole in the refrigerator for 4 days.
What method is best to reheat the Mexican Tortilla Casserole?
You can reheat the remaining Casserole in a preheated 350* oven. Keep the Casserole tightly covered and place it on a baking tray and in the oven for 15 minutes or until heated through. You could also heat single servings in the microwave for 1 to 2 minutes until the desired temperature is reached.
Can I freeze the Mexican Tortilla Casserole?
The Casserole can be frozen for up to 3 months. Be sure it is cooled completely and wrapped in foil tightly. Thaw in the refrigerator overnight.
Can I make this in advance?
This Mexican Tortilla Casserole can be made in advance. Assemble as instructed. Do not bake. Wrap tightly and store in the refrigerator for up to 24 hours before baking.
